Simple Roasted Butternut Squash

This was my first attempt at butternut squash. I roasted it with brussel sprouts and pine nuts. YUM!!! There was none left.

Spring Fling Layered White Cake

I have made this cake as the recipe states on a couple of occasions (once for my diabetic mother's birthday and other times for family and church gathering) and it is always enjoyed by all! Many sugar conscious ladies ask for the recipe.

Pumpkin Fluff Dip

I make this every holiday season and everyone always asks for the recipe! Sometimes I make a lower sugar version for my diabetic mom with sugar free pudding and light whipped topping...no one can tell the difference! It still gets gobbled up!

Homemade Black Bean Veggie Burgers

We didn't like this at all. Won't make again. I'm not quite sure what I expected, but I will stick with Boca...at least it reminds me of a burger. I guess if you are looking for a spicy bean patty this is your recipe.

Lime Garlic Chicken

This was very good. I didn't use as much butter in an attempt to reduce some of the fat, cholesterol, and calories. I did slice the chicken like the recipe says. I didn't have a lime so I just used some key lime juice I had on hand. I added some chicken broth and flour to what was left in the pan after removing the chicken to make a gravy to go over the rice. My whole family enjoyed it! The strips would also be good on top of a salad

Pumpkin Spice Cake II

I made this cake last month for my Dad's birtday! It was yummy! To make it a little heart healthier for him and my mom I substituted applesauce for the oil and used 5 (I think) egg whites and one whole egg.

Whipped Cream Cream Cheese Frosting

Don't know what I did wrong with this one, but it was much too runny to frost my pumpkin spice cake (from this site) for my Dad's birthday last month. However, it's taste was wonderful and it made a great fruit dip instead!

The World's Best Turkey

I had used this recipe last year for a rib in turkey breast along with my ham and it was a big hit! Yummmm! I did it again this year with a 12 lbs. turkey! Yummmm once again! My family, including my parents who joined us love this turkey! It's even great and juicy the next day! Used turkey stock (boiled the giblets and neck) and the juices from the turkey to make a wonderful gravy as well! I would be too afraid to ever try anything else! This recipe makes "The World's Best Turkey"

Day Before Mashed Potatoes

The only thing I did different was I adjusted it to use a few more potatoes and I prepared in the morning to make for an evening Thanksgiving dinner. No rave reviews and I thought it was pretty bland tasting. Maybe I didn't adjust the onion powder enough. Anyway, think I will stick with my tried and true garlic and herb mashed potatoes in the future. If I was to make this again I would definately add a touch of garlic along with the onion powder.

Cousin Cosmo's Greek Chicken

Yummy! I love greek style food...especially anything with feta. Hubby and daughters enjoyed it as well! Younger daughter asked for more leaves (I didn't dare tell my daughters it was spinach). I added some spinach leaves on top of the cheese mixture in the chicken before folding, and added 2 bouillon cubes to the water, as I didn't have broth like others recommended. Older daughter enjoyed helping and taking out her frustrations with the meat mallot...good therapy for her! Definitely will make again and again!

Tantalizingly Tangy Meatloaf

The whole family loved it! My husband who doesn't like meatloaf even liked it! I didn't have any pinapple preserves but I did have hawaiian marinade (pinapple/teriyaki flavors) that I added instead. Made sweet and tangy moist meatloaf! I can finally fix meatloaf that everyone will eat!!! a new family favorite!
