Chef John's Sausage & Shrimp Jambalaya

Didn't have the brown rice, so just served it over white rice. Also added a bit of minced garlic with the onion. Very, very good.

Shrimp Scampi Bake

Loved this! Super simple! I fixed as directed, but after tasting the sauce in the pan, I thought it needed more garlic as the mustard was a bit prevalent. (Plus, I like strong garlic flavor.) After baking, though, the flavors married very well and the overly mustard taste was gone. (As for Dijon, I used the Walmart brand Dijon--nothing like a Grey Poupon, etc.) I don't think the additional garlic would've been necessary. Delicious. Easy. Fast. That makes it a perfect recipe in my cookbook!

Southern Ham and Brown Beans

YUM. The only ham & bean soup I've ever had was made with dried navy beans. That's what I *was* planning on making until I realized my pantry only had a bag of Pinto beans. Am I ever glad. This was delicious!! Took the advice of another reviewer and 'brined' the beans overnight. Drained that water off and then followed the recipe as written (with suggested 6 hour cook time). Delicious. Perfect for a supper on a night the temperature is already at 10 degrees F!

Shrimp Scampi

Like other reviewers said, the wine seemed a bit too much. (Wish I would've read that before I fixed it as written.) I poured the sauce back off the shrimp and reduced it in a saucepan by almost half. I then added it and the shrimp to the pasta. Quite good with that adjustment! Would be nice dinner for casual company! Thanks!

Baked Kale Chips

I'm going to need to buy MORE kale. These were delicious. Even my kids loved them. Used ingredients as listed, but did change the process as I don't have a salad spinner. Prepared kale, dried with a dish towel. Placed kale leaves in a single layer on cookie sheet. Then misted with olive oil and sprinkled with Lawry's Season Salt. Next time I will cut back on the salt, just a touch. Thank you for posting this!!

Boneless Buffalo Wings

5 stars with one caveat: I DID NOT MAKE THE SAUCE and TRIPLED the FLOUR mix. Otherwise, made exactly as directed. The 'wings,' however, were fantastic. Even without sauce they were delicious. We couldn't stop eating them. Will definitely be making again...and again...and again. Thanks!

Pecan Pie V

Made exactly as written. The flavor was good, but it wasn't the consistency that I love when eating a pecan pie made with good ol' corn syrup. This had almost a praline like top. I baked it at 350 for 40 minutes. The crust was golden, but the filling seemed to overdone/dry. Don't get me wrong--still completely edible, just not the ooey-gooey goodness I like in a pecan pie. If I make it again, I will either lower the final baking temperature or shorten the baking time. Definitely needs to be eaten warm.

Sweet, Sticky and Spicy Chicken

Made it as written and it was way to hot for our Midwestern palettes! Still loved the flavor, though. Cut back on the hot sauce the next time I made it. I also TRIPLED the sauce and let it really reduce while simmering. Another change I made in subsequent tries, was to flour the chicken pieces and fry them in a bit of oil to crisp them up a bit. This has been a good addition to my menu planning.

Steak and Bacon Tournedos

I had forgotten all about this recipe. LOVE it. It's a great way to enjoy beef--especially in this economy! It's not prime rib, but it's an enjoyable dinner. Like others, I used parmesan before, and have also added drained/squeezed frozen spinach. Yum. As for the previous reviewer, yes, people do eat like this. Most of us enjoy it in moderation, with the realization that no food is a bad food--only the choice in how you use it is bad. If you wish to have a discussion about food choices, I'd kindly suggest that you take it to a more appropriate site. This area is for reviewing recipes.

Roast Sticky Chicken-Rotisserie Style

Best. Chicken. EVER. My husband (not a chicken fan, as he deems it too healthy!) loved it. Kids loved it. I thought it tasted better than rotisserie chicken from the store.
