Easy Meatloaf

I made this recipe tonight with ground turkey. It came out very bland and undercooked after an hour. I followed the recipe exactly. Overall, the meatloaf was too mushy. Even my kids didn't like it. Maybe we are just not a meatloaf fans:( I won't be making this recipe again.

Best Chili

This chili recipe is amazing! I wanted a more traditional recipe since I was in charge of bringing chili for 30 people. My old recipe calls for larger amounts of red wine. For the most part, I followed this recipe exactly. The only thing I changed was using ground turkey and decreasing the amount of chile/jalapeño peppers & tomato paste. I didn't want the chili too spicy and I only had 1/2 of the tomato paste required. I doubled the recipe and used 1/2 of a seeded jalapeño pepper. I love the fire roasted tomatoes and smoked paprika. The only thing I will add next time is some green peppers for color. I will definitely be making this again:-) Thanks for a terrific recipe!

Big Al's K.C. Bar-B-Q Sauce

Absolutely amazing! Sweet with a slight kick to it. I made this to go with a shredded chicken BBQ. I wish I had doubled the recipe. I will definitely be making this again.

Turkey Tenderloins

I marinated this turkey overnight because I didn't get a chance to make it last night. It had a delicious flavor and was still very tender. I served it with brown rice and asparagus and my entire family loved it. I will definitely be making this again!

Sarah's Applesauce

This recipe is amazing!! I made it as a side for my 16 guests. Everyone raved about it even the adults. I doubled the recipe using 16 small Granny Smith apples and I followed the recipe exactly. It might seem a bit soupy but the liquid is absorbed. I made it the day before and kept quite a few large chunks of apples since I was also serving it to adults. I didn't want it to seem like canned applesauce. Don't miss out on this yummy dish! It will be a perfect side dish for fall:)

Brisket with BBQ Sauce

After reading all of the rave reviews, I decided I would make this recipe for my 16 guests. I wasn't disappointed! It was absolutely delicious and even better the next day. I cooked 11lbs in my oven for 6 hours. After I took it out of the oven, I scrapped off the extra fat and shredded the meat. I would also recommend cutting the meat into bite-sized pieces with scissors if you are going to be using buns. I added the delicious BBQ sauce and cooked for another hour. I also cooked a 3lb brisket in my crockpot. I wasn't sure if everyone would like the BBQ sauce so I cooked this brisket in beef broth and added sliced onion and a few garlic cloves. In the end, everyone raved about the BBQ. The oven was easier and didn't have to cook as long. Don't pass up this recipe! It is definitely a keeper and super easy for a large crowd.

INCREDIBLE Raspberry Cheesecake Cookies

I made these cookies yesterday to take to a pitch-in. I couldn't find raspberry chips so I substituted fresh raspberries. I also added white chocolate chips. These were definitely NOT incredible:( Every batch came out with a strange texture. It was almost like the cookies weren't done. I baked them 12-14 minutes. The cookies felt rubbery on the outside. My kids ate a few but said they looked and felt weird. They tasted ok. The cookies might have turned out better for me had I used 4oz of cream cheese. Maybe that was the reason for the issues with the texture. Not sure....I would suggest trying these out first BEFORE you bring them out!

Black Forest Cake I

I made this cake for my son's birthday. It did take a few hours to put together but everyone loved it! The cake looked beautiful. Here are my thoughts after making it: 1. Start cooking the cherries first. They will take a good 30-40 minutes to thicken and then you need to cool them. I did this in the fridge for another 30 minutes. 2. Bottom of the cake was a bit overcooked. I baked the cakes for 36 minutes. Next time, I will pull them out 32 minutes. 3. Whipped topping was not quite sweet enough for my taste. Next time, I will add just a tad bit more confectioners sugar. 4. I liked the crumbled cake on the sides of the cake. But, next time, I will use shaved chocolate with a vegetable peeler. 5. Do put your cake together several hours before you need to serve it and refrigerate it. I finished with mine around 11am and served it at 7:30pm.

The Best Lemon Bars

This is a wonderful, easy recipe! The crust held together well as I cut them into bars. The lemon filling was tart and delicious. I will definitely add these to my Christmas cookie list!

Peppermint Meringue Cookies

I wanted to include these cookies in the teacher's cookie baskets. I tried to pipe them but the candy canes kept getting stuck in my star tip. So, I used a spoon to place a small dollop on the pan. The "blobs" did not look great and were so uneven. I added red food coloring and the cookies turned a shade of light brown once I cooked them:( The kids were not wild about this cookie. However, I did not give up on this recipe. I have made them again with the following changes: I used a mini chop to crush the candy canes into fine particles. This worked well with my star tip. I did not use any food coloring. I also added peppermint extract. The cookies now look uniform and very pretty.

Iced Pumpkin Cookies

These cookies were absolutely delicious and so easy to make! My 11yo son and I followed the recipe exactly and they came out perfectly! We used my favorite cream cheese frosting on top- 1 stick butter softened 1 8oz package cream cheese softened 1 tsp vanilla 3 cups powdered sugar Cream butter and cream cheese then add vanilla. Add powdered sugar by the cup. This makes enough for a 9 X 13" sheet cake.

Chewy Peanut Butter Chocolate Chip Cookies

These cookies were definitely chewy and moist. However, they were lacking that true peanut butter taste that I was looking for. I might try to double the peanut butter and see what happens.

Fish in Foil

This recipe is just amazing and so delicious!! I submitted tilapia filets and added raw, thinly sliced zucchini and squash. The fish and veggies cooked up perfectly. My entire family loved this dish and asked that I make it again! Maybe next time, I will make it with different fish and veggies. Yummy!!

Sue's Hot Fudge Sauce

Absolutely delicious! I did change the recipe a bit according to previous suggestions- decrease sugar to 2 cups, add another 1/3 c cocoa powder and 1 tsp salt. I also sifted all dry ingredients several times so I didn't have to blend the sauce. It does taste like Sanders hot fudge sauce. Yummy! You should note that this sauce doesn't reheat up well. I made it the day before I needed it. It was very buttery and didn't blend well. Use the day the make it.

Minestrone Soup

This recipe is just ok. I made it for lunch for 40 women. First of all, it took way too long for the vegetables to cook in the liquid. I would recommend cooking them beforehand in a skillet then adding them later. I am not sure if it is the vegetable broth or not but the soup tastes a bit bland. I am not sure if switching to chicken broth would be better. I did add ground turkey to the soup to add a bit of flavor. That did help.. I'm not sure if I will make this again considering there are probably a ton of other minestrone recipes to try!

Pineapple Salsa
