Fluffy French Toast

This was a nice change from the traditional egg, milk, cinnamon combo I usually default to. There wasn't a drastic difference but it just tasted better overall. Against my better judgement I "saturated" the Texas Toast and to my surprise it cooked through just fine on my griddle and was not soggy or mushy at all in the middle - perfectly done! My little kids ate them up, too. I didn't change any ingredients and followed the recipe step by step. I think I cooked these on my griddle at about 350 degrees.

Simple Strawberry Syrup

EASY and AMAZING! The bonus is that the leftover pulp makes a great spread for toast and sandwiches, too. I made this exactly as stated but I think it took a little longer than 20 minutes to cook down. It was really great served warm on french toast and equally good the next day on leftovers. I've already added this to my real life recipe box as a keeper and will be making it next time we have guests over for breakfast or brunch.

Lip-smacking Popcorn Concoction

This stuff is GOOD! I made a half batch and used a few substitutes from what I had in the cupboards... 1/3c. popping corn kernels, popped, 2c. Kix, 1c. Life cereal, 1/2c. peanuts, crushed, 1c. pretzel twists, broken up, 1/2 lb vanilla almond bark. My preschooler was able to help me with all the dry ingredients, too. It has a light tasting popcorn ball flavor and a good salty/sweet balance (so my husband will love it!) It is still cooling but I just can't stop eating! The half batch was perfect for a family with two small kids. Will definitely be adding this to the recipe box!

Cucumbers And Egg Salad

This was a great salad for a summer birthday party we threw in the midst of unpacking at our new home. Not only was is easy to make but it was really tasty! I didn't think it sounded that great but tried it anyway and I'm glad I did. It was very light tasting, not too eggy and a really nice cool salad for a BBQ. I ended up adding another scoop of mayo and some paprika since I felt it was kind of bland at first. I also patted the cucumber and pickles dry since others said it was coming out runny and it turned out fine. This is a recipe you could play with too by adding more or less of the ingredients you want. I think it would also be good with some green onions or maybe even some shredded carrot. Definitely give this one a try!

Tuna From Can To Frying Pan

GREAT recipe! We made it for lunch today and my picky 2 1/2 year old even scarfed it down! It was indeed super quick. I did use cheese on the broccoli instead of butter and seasoning and I put less teryaki in (little over 1/2 tsp). I will probably use more broccoli next time too. I wish I had made 4 servings instead of 2 because I was still hungry when I was finished. We served it with fresh red grapes which were the perfect pair. This dish itself was even good after it got cold. I'm definitely making this again and might even add teryaki to some of the other tuna recipes I have... it just tastes so good (even if you aren't a big tuna eater)!
