I really liked the flavor of the filling. In fact, I kept snitching so much of it as I was rolling them up, I spoiled my appetite. Even cold it was tasty. However, I used a whole can of enchilada sauce for the top, and ultimately that overwhelmed the flavor. Next time, instead of cutting back on the sauce (using the recommended amount), I might try substituting a creamier sauce. I have another enchilada recipe that is cream of chicken soup based. I love the texture & sauce but the filling is super bland. I think combining the two recipes will make this a family winner.
This was really good with a "whole grain" style flour tortilla.
