Spicy Vegan Potato Curry

It's funny to give this four stars when I could barely eat it, but I recognize that I'm a wimp when it comes to hot foods. This was too hot for me--I loved the tastes but the afterburn got me. I passed it on to a friend with a hardier set of tastebuds, who said it was excellent. I would suggest cutting way back on the cayenne if you need a milder take.

Fiesta Chicken and Black Bean Enchiladas-dup

I really liked the flavor of the filling. In fact, I kept snitching so much of it as I was rolling them up, I spoiled my appetite. Even cold it was tasty. However, I used a whole can of enchilada sauce for the top, and ultimately that overwhelmed the flavor. Next time, instead of cutting back on the sauce (using the recommended amount), I might try substituting a creamier sauce. I have another enchilada recipe that is cream of chicken soup based. I love the texture & sauce but the filling is super bland. I think combining the two recipes will make this a family winner. This was really good with a "whole grain" style flour tortilla.

Zesty Slow Cooker Chicken Barbecue

I've made this 4-5 times in the last few months. A simple recipe, but really good. I don't add all the BBQ sauce while cooking, because I find the end result is watery. Once done, I pull out the cooked chicken and some of the juices, and drain off the excess. Then I add in the rest of the sauce.

Grilled Chicken and Potato Foil Packs

Probably the moistest chicken I've ever prepared! The only reason I don't give this more stars is that the oil & vinegar seasoning blend had a flavor that, to my palate, didn't "go" with a chicken and potato combination. There was a kind of tangy sweetness about it that I wasn't expecting. I'll make this again and alter the "sauce."

Hamburger Potato Casserole

At first nibble I rated this as just good simple comfort food. But before dinner was done the adults had had 3rd helpings and my son had seconds. It's nice how the sauce lends itself to additions (I added a little dry mustard and some sour cream). I covered it during cooking after noticing how dry the top layer of meat was getting. Next time I'll cut the potatoes much thinner--it took the full 90 minutes and a few of them still could have used more time.

Cheesy Ranch Potato Bake

I've made this three times now; it was very well received in my house. I appreciate the reviewers who recommended cutting down the butter and leaving the skins on. I have a french-fry cutter that makes cubing the potatoes a snap. Ends up being very easy to prepare. Sharp cheddar is our cheese of choice for this one.

Pear Bread I

I was looking for a way to use up my pricey gourmet pears which were overripe, and this was it! I thought this bread was merely tasty, but several of my coworkers said it was the best quick bread they'd ever eaten. This from an office that eats a lot of quick bread. Wow!

Kielbasa Pasta Casserole

Served this at a casual dinner party; it was well received. The smoky sausage flavor made a nice change from the usual pasta-tomato recipes. It makes a lot--I cut the recipe down a bit having read in reviews that the portions are generous.

Chicken and Sausage with Bowties

My mother-in-law makes a similar dish. When I couldn't find her recipe card, I tried this one. An excellent version of hers, and much quicker! This is my standard "company" dish. I use white wine instead of red, and go heavy on the rosemary (and use fresh). I always get compliments! Excellent with a strawberry spinach salad.

All Day Macaroni and Cheese

A big hit at my house, though I did heed all the warnings about not cooking the macaroni all the way through. According to a coworker (who loved it when I brought it to potluck and later made it at home), this recipe suffers if you try to sub in too many low- or no-fat ingredients. I'd say the same for going with regular cheddar instead of sharp.

Sweet Potato Biscuits

Very mild sweet potato flavor--I would have liked more. They're a lovely color, and were great plain, even without dinner. My toddler gobbled them, making them a great sneaky way to get some veggies into him.

Rhubarb-Raspberry Crunch

24 servings? Not in my house. I left my husband alone with it and most of it was gone by the next day. One serving is never enough. Really delectable, a wonderful combination of tart and sweet and smooth and crunchy.

Cottage Cheese Bread I

Excellent bread and a nice way to get more calcium into my milk-hating toddler. I used only 1 tsp yeast and that was just fine. Makes fabulous french toast, too! I'll make this one many more times.

Soft Christmas Cookies

I'd given up on sugar cookies because so many recipes disappointed me. Thanks to the tips from previous reviewers, these came out great. I didn't have butter so I added flavor by substituting butter-flavor crisco for half the margarine. I also used less flour, baked them at 350, and used half vanilla, half almond extract. I took the easy way out and decorated them using cake frosting, with colored icing drizzled on top. Fabulous and easy, too.

Wild Rice Casserole I

I'm so happy to find a side dish recipe for the crockpot. I took this to work for a potluck and it got rave reviews. To cut down on saltiness, I will probably add only one of the rice flavoring packets next time.

American Shepherd's Pie

This gets five stars for ease of preparation. I took the advice of other reviewers and threw in a few additional handfuls of frozen vegetables. I also added about 1/4 soup can of water so it would have some "gravy." Finally, I used only a smidgen of thyme and used rosemary as the main herb. Personal preference; I like rosemary in shepherd pie. Husband and I loved it.

Sophie's Zucchini Bread

This is great bread; moist with a very fine crumb. I made it in a bundt pan (instead of two loaves) and that worked great. You simply MUST grease the pan though.
