I followed others' advice - sauteed the mushrooms with olive oil and garlic, pounded the chicken and seasoned with salt & pepper before dredging (didn't use eggs), seasoned with both bread crumbs and some dried herbs (oregano and thyme), added a can of cream of mushroom soup, and used asiago cheese which I melted over the chicken in the microwave after it was done baking. My boyfriend and his roommate were over for dinner that night and there were no left overs! Delicious!
