Twice-Baked Mashed Potatoes

This was really good. I didn't use green peppers. I used green onion, added garlic, white pepper, sour cream and heavy whipping cream, for texture. I also added parmesan on top, which browned nicely. I may try this with prosciutto next time.

Sophie's Zucchini Bread

This bread is so easy and so good! I used a huge zucchini from my dad's garden, which was enough to double the recipe. I added a little grated lemon peel for freshness. It not only tasted good, but the slices were beautiful with fresh green pieces of zucchini and nuts in them! Thanks Sophie!

Fresh Fig Cookies

My fiancee and I loved this recipe! I added blueberries and fresh ground nutmeg. I also substituted the walnuts for hazelnuts. Very fresh and yummy!

Caramels

This recipe makes a delicious buttery caramel! I found the reviews very helpful on this recipe. I used honey instead of corn syrup. I also replaced the evaporated milk with coconut milk. These two substitutions made the caramel even more wonderful. I had trouble with the thermometer, but found dropping a little caramel into a glass of ice water (as one review suggested) is the best test for consistency. Don't give up, it does take a while but is fully worth it, your friends will think you are a genius in the kitchen when you master this one.

Rich and Creamy Tomato Basil Soup

This is a great recipe! I added shallots, garlic and roasted red peppers for a little more flavor. I also replaced some of the butter with olive oil. It was so rich and delicious!

Wild Rice Stuffed Acorn Squash

This recipe is fantastic. I ignored the order of the instructions as indicated in other reviews which was helpful. I made the rice and stuffing individually using broth instead of water. I sauteed shallots, garlic, green apples, celery and mushrooms in olive oil and then combined this mixture with dried cranberries, pecans, the rice and stuffing. I topped the stuffed squash with French's onions and grated parmesan which browned nicely. This recipe was flavorful, filling and tastes wonderfully of Thanksgiving!
