Skillet Chops with Mushroom Gravy

a very quick dinner to pull together! i increased the grated parm to equal my bread crumbs (1/2 cup each) and added a dash of salt, pepper and garlic powder. after breading, i saved the leftover bread crumb mixture to add in with the soup & milk, as another reviewer suggested -- definitely thickened up the gravy to a rich and delicious sauce! and, because i added in the extra dry crumbs i had to increase the milk to 1-1/2 cups. i also added fresh sliced white mushrooms which added a nice surprise to the gravy. the gravy is what makes this dish! i only had two large-ish porkchops to cook and there was very little gravy left after we finished dinner! served with mashed potatoes and rolls, this made a great dinner. next time, i'll cook the pork chops a little longer in the first step to achieve a crispier coating on the outside.

Chewy Peanut Butter Brownies

very easy and yummy recipe! i used a 9x13 casserole and baked at 325 for 40 minutes, as others suggested. i mixed in peanut butter and chocolate morsels. the only improvements that need to be made (on my part and not the recipe's) is to cook maybe 5 more minutes (the center was still a little doughy), and to add more chocolate morsels to the top, after baking possibly, just to achieve a chocolate/peanut butter combo. otherwise, just as is, this is a great dessert! (i have made this twice now, and we gobble them up in record time!)

Garlic Chicken Stir Fry

simple and quick recipe. added in fresh, sliced vegetables -- yellow and green onions, mushrooms and carrots. marinated cubed chicken breasts and a handful of shrimp in some soy sauce, pepper and 1 teaspoon of ground ginger (not fresh). i browned the garlic first in some peanut oil, removed it and added it to the chicken and shrimp. then cooked all my other vegetables with a dash of soy sauce and removed them to a plate, while i cooked the chicken and shrimp mixture. then added the vegetables back in and let sit while i made some five minute rice. i used only about 1 tablespoon of soy sauce for the "sauce" with the cornstarch, sugar and water mixture since i'd added soy to the vegetables and meat before. i enjoyed this, but next time i'll omit the ginger since i didn't really think it added anything to the dish flavor.

Chocolate Chip Cookie Pie

i left this is the oven for about 1 hour and 20 minutes at a slightly higher temperature for the cookie pie to cook all the way through. (i put an aluminum ring -- a pie pan with the center cut out -- on top of the pie to keep the crust edges from burning.) it was very rich and tasty right out of the oven, but i enjoyed it much better after having set it out overnight and eating the next day. i used a deep dish pie crust and had no problem with spills or too much mixture. good recipe, will keep it for an easy dessert!

Italian Breaded Pork Chops

this recipe was fairly easy. i only used one egg and could have gotten by on one cup of crumbs -- but i think that all depends on the size/quantity of your pork chops. i'd skip cooking the garlic next time and just add some garlic powder in with the crumbs instead. the taste was good, but nothing spectacular.

Steak Tip Marinade

Pretty easy marinade to put together. I added in some ketchup to balance the other flavors and make it not so strong. I marinated a tri tip roast cut into large wedges overnight. Then, I cut them into bite size cubes and marinated for a couple more hours. Next time, I'll marinate the cubes overnight to take advantage of the good marinade flavor.

Chicken Fried Chicken

pretty easy process for fried chicken. i dumped all the flour mixture ingredients into a ziploc bag, just so a i didn't have another dish to wash. i used chicken breast tenders, cooked for the same amount of time, and they still were pretty juicy and tender. i added in garlic powder and "tabasco" seasoning salt to spice it up. very crunchy crust. tastes just like fried chicken with crunchy skin but not as greasy (and without the skin, less calories)!! quick and simple recipe.

Bacon Cheeseburger Upside Down Pizza

this didn't taste much like a pizza or a bacon cheeseburger. it probably needs more bacon to actually get the flavor. i added in extra seasoning (salt and pepper), after reading other reviews. and instead of making the dough topping, i put refrigerated pillsbury pizza crust dough over the top and trimmed any edges that were hanging over the casserole dish. overall, this dish needs some adjusting of flavors.

Stuffed Peppers

i omitted the garlic and onion powders, and instead added one yellow onion chopped and about 2 teaspoons of crushed garlic. i baked mine at 400 for 40 minutes, cut them in half, sprinkled with mozerella and baked for 20 more. i didn't baste them every 15 minutes or cover them with foil, and they came out just fine. next time, i'll add in more tomato sauce and mix in mozerella before stuffing. these are really good and make a full meal alone. they remind me of a pizza without the crust! versatile and great recipe!!

Arti-Cheesy Chicken

this wasn't as exciting as i anticipated after reading the rave reviews here. i used reduced fat feta cheese, reduced fat mushroom soup and combined the cream with 2% milk (half cream/half milk). i over-salted the dish, not accounting for the salt in the soup already. i think they're are too many flavors/ingredients competing against each other in this dish, and if i were to make this again, i'd eliminate the olives first and the artichokes second. i was impressed, though, that the chicken (which i cut into large chunks) remained very tender and didn't require a knife to cut. i'd also reserve this dish for the full caloric effect, and use non-reduced fat items all the way.

Easy Peanut Butter Fudge

the taste is good, an equal mix of peanut butter to chocolate. but, i didn't have much luck with making this recipe. the fudge wouldn't harden after sitting in the fridge overnight. i mistakenly put in 2 cups of confectioner's sugar (1 pound = 4 cups), so i had to remix in the missing 2 cups! even after the addition, it still wouldn't harden. i ended up leaving it in the freezer overnight, which did the trick, but i have to keep it in there otherwise it gets very soft of gooey in the fridge. don't get me wrong, the taste is good, but i will try a different recipe before i come back to this one again.

Sweet and Sour Chicken I

my first thought when i tasted this: "oh my god, did i just make that??" this was amazing! the batter has a really good flavor. i added in extra pepper and salt. i served it with steamed white rice and stir fried vegetables (sliced onion, carrots and red pepper) in peanut oil. i added in just under 3/4 cup of sugar and the sauce was just perfect! this is a keeper -- great recipe, just as good as somethiing you'd get in a restaurant!

Garlic Chicken

simple and quick. i doubled the garlic, added salt and pepper to the bread crumbs and turned the oven to 450 and cooked for 30 minutes. came out with some crisp to the coating. also poured the remaining olive oil and garlic mixture into my casserole with the chicken, and added enough olive oil to come up on the chicken about 1/4 inch. the resulting garlic oil was tasty for dipping french bread in.

Pizza Salad II

i'm the one in the family that picks all the peppers out of supreme pizzas when we order them, but with this recipe i really enjoyed all the flavors! i enjoyed it without the dressing mixed in, but either way is good. i added in some chopped salami for another flavor. i also warmed some boboli bread in the oven, and we had a complete meal. very versatile to meet your own preferences. easy and quick to put together. delicious!

easy and quick to put together. i used frozen hashbrowns instead of potatoes -- which cut down on cooking time considerably. hearty dish with lots of breakfast flavors. served with biscuits makes it a complete meal.

Chicken a la Mayo

a unique combination of flavors makes ordinary chicken taste better. it's a bit messy to handle, but is a quick and easy process. i added a teaspoon of all the spices and mixed a 1/4 cup of low fat mayo with 1/4 cup of regular mayo. the entire resulting flavor was good. one point: be sure to adjust your cooking time/temp if you don't flatten your chicken to 1/4". i ended up adding about 15 additional minutes at 400 degrees in the oven and finished it for about 2 minutes on my george foreman grill before the insides were not pink anymore. just be sure to check and see what works for you!

Grilled Pizza Sandwiches

i thought it was peculiar to place the sandwich mayo side down on the grill, but it worked fine and was a unique process. this is a quick, alternative to traditional grilled cheese. next time i'd try spreading a light layer of pizza sauce inside the sandwich, in addition to the mayo mixture on the outside -- just to add more flavor.

very fast to put together/cook. nice alternative to traditional quesadillas and pizza. i added a little more cheese on top of the pepperoni to ensure a good "seal" with the top half of the tortilla. versatile recipe because you can choose your own fillings. perfect for a quick lunch or no-fuss dinner.
