Quick and Easy Refried Beans

I made these last night. Since I am the type that will not "soak beans overnight" kind-of-process - this was ten times better than buying canned refried beans. As others have stated, I will never buy a canned refried bean product again. This is the perfect answer to being easy, quick and flavorful-with a homemade taste versus a canned taste!

Lobster Colorado

Since Valentine's Day 2012 is upon us, I actually remembered the name of this recipe and printed it out again. I made this last year for Valentine's Day and it is definitely "worthy" of the occasion. I did (and will do again) about everything the other reviewers recommended...lighten up on the Old Bay, add a splash of white wine to the lobster, don't cook lobster "til done"...cook it "till almost done" as oven finishes it off. Truly a simple and remarkable meal....and I cannot believe I forgot to review it last year!

Baked Omelet

This is the most versatile recipe and it is a bit more "special" than serving eggs. I serve this to company. You can put anything you and your guests like in it just remember 8 eggs to 1 cup milk...the rest is up to you. I read someone's review that they poured into muffin tins, which I will try when I have guests with different likes and dislikes, you can "individualize" them. Another great thing about this one is while the dish is baking for 45 minutes, it gives you plenty of time to get the table set, the smoothie blended, the toast toasted. Serve it right in the baking dish!

Clam Sauce with Linguine

This is so simple and so great. I change nothing in this recipe. I serve this, as a side, with Filet Mignon when company comes...it is easy and you cannot go wrong! When serving 4 as a side dish, I cut the recipe in half if I do not want leftovers. If you want leftovers, make the whole recipe.

Slow-Cooker Barbecue Ribs

I am a pretty good cook; however, I have never made baby back ribs before. I made this last night and it was fabulous! I read the reviews and made the substitutions (BBQ sauce for Ketchup, Ketchup for Chile Sauce as I had none). I followed everything else exactly. Question: If we double the sauce, could we slow cook 2 slabs of ribs at a time ... has anyone tried this? Another comment: DO remove the back membrane, and DO cut them before putting in slow cooker. I cut into 3 sections - next time I will cut into 4 sections.

Vegan Bean Taco Filling

So easy and so fabulous. I read the reviews and did what some recommended: removed the cornmeal. Used Rotel instead of Salsa and added frozen corn. It was great sour cream and avocado slices.

Bread Pudding with Whiskey Sauce III

I followed the recipe exactly - except - increased the cinnamon to 1 Tablespoon and used Rum instead of Whiskey (what I had on hand). It was fabulous

Mediterranean Chicken Orzo

I made this last night and it was great. I followed the recipe exactly, with the exception of adding roasted asparagus (I had it on hand). I did not use the Tyson Chicken I roasted my own - which wouldn't alter anything. Very tasty and simple.

Pork Chops Stuffed with Smoked Gouda and Bacon

After reading many of the reviews, I made this last night. It is a keeper. I followed the recipe ingredients exactly. However, I did not grill...I browned in the "bacon pan" for just a few minutes, then transferred to a glass pyrex with water in the bottom, baked 350 covered for about 12 minutes, 350 uncovered for another 12 minutes. They were PERFECT. My chops were only a little over an inch thick. Note on the smoked gouda (versus regular gouda)...I had to get the smoked version from the deli counter; it was not prepackaged. Next time I will add apple.

World's Best Lasagna

Yesterday I decided to make lasagna. I got on the internet and found this recipe. I read about 2 pages of reviews and made the following subtle changes: cut salt in half, added 1/4 cup pinot noir, bought the "small cut" no-bake berilla noodles...and made 2...1 for dinner and 1 for freezer. My family LOVED it....this is a keeper.
