My favorite things to cook
I live in Texas, so I enjoy my BBQ pit. I have a Traeger Pellet Grill. It's an amazing smoker. I cook pulled port, briskets, steaks, ribs, and all the usual stuff. Love it!! Otherwise, I general favor foods with a lot of flavor. Garlic, red pepper, onions, etc. I used to prepare gourmet desserts. I even won a cooking contest with one of them. But since I am diabetic, I got tired of giving the deserts away. So I prepare desserts less often.
My favorite family cooking traditions
Stuffed sweet potatoes. Oven baked beans. Butterscotch cream pie. Biscuits and gravy. Yeah baby! I mix it up -- so not that many traditionals.
My cooking triumphs
I won a baking contest with a Key Lime Torte. Wonderful cake. It wasn't my recipe, but I'll take credit for the win. My chili recipe is the best on the planet. I don't care what anyone out there claims. My chili rocks!
My cooking tragedies
Thanksgiving 2010, I couldn't find a recipe for a dish we make every year, so I did it from memory. I blew it big time. It's the first dish I've really blown in as long as I can remember. Some things are bad - but this was impossible to eat. Oops!

Cuban Pork
This was an amazing dish. I never imagined how this combination of flavors would work together. We did the following: 1. Added tons of fresh garlic - we are true garlic lovers. Ten cloves or so, finely diced. 2. Add just a little black pepper. The pepper compliments the lime flavor nicely. 3. Diced the meat into 1" chunks and cooked it at very high heat to get a nice browning. Too low of heat causes over cooking. We did use extra olive oil in the pan to encourage browning. The result was bite sized pork with lime and garlic flavors. We served it with black beans and rice. It was amazing!

Big Soft Ginger Cookies
I added a couple tablespoons of finely diced crystalized ginger to give this recipe a special zing. What a wonderful recipe, with or without the crystalized ginger. For some reason, my dough was softer than it should have been. The cookies came out wonderfully, but lacked the cracked top that's characteristic of this cookie. But I'm sure that it was my fault. I'll make this recipe over and over and over again. What an unbelievable flavor.
