Winter Red Sauce over Spaghetti Squash
About this Cook
I live in the beautiful Blue Ridge Mountains of Asheville, NC. I have been dancing all my life and own a dance studio in the South Asheville area. What makes my dance studio unique is that we specialize in Clogging - the official state dance of North Carolina! Good thing I dance all the time, because I sure do love to cook! :)
My favorite things to cook
Baking is my favorite, especially desserts such as cakes and cookies, and I also love to bake all sorts of breads from scratch- challah, rolls, loaves, cornbread, etc. I also enjoy making gourmet desserts such as creme brulee and tiramisu and I also love to cook anything Italian!
My cooking triumphs
Perfect Creme Brulee on the first try! Figured out how to make Olive Garden bread sticks exactly like the restaurant!
My cooking tragedies
Banana bread... I forgot to add the eggs. Big gooey mess in the oven.

Grilled Marinated Swordfish
Excellent marinade, however agree with other reviewers that swordfish needs to be marinated 6-8 hours. I will also used a little more soy sauce next time.

Sweet and Savory Kale
Hands down the most delicious kale recipe EVER!!! However, would just like to note that the olive oil is completely unnecessary- Bring the chicken broth to a boil then throw in the chopped onions- they will cook while it boils, no need to cook separately in oil. Then mix in the other ingredients. I substitute stevia for the sugar to save on calories too. When you cut out the olive oil and sugar this brings this recipe down to about 80 calories per serving!

Winter Red Sauce over Spaghetti Squash
I am rating this recipe based on the concept. I never thought to use spaghetti squash as actual spaghetti but what a fantastic idea! I baked the squash as the recipe calls for then pulled it apart and fluffed it up. I covered it in my own homemade meat sauce and it was fantastic! My boyfriend and I both love pasta but are trying to cut out carbs. This is a low-calorie, no carb, yummy alternative to spaghetti and meat sauce. Thanks so much for sharing this creative idea Ginger!
