Smooth Sweet Tea

Reviewed: Mar. 27, 2010
This was too sweet for us but can't criticize it for that because it is called (sweet tea) :). I liked very much how smooth it was, I will make it again with less sugar. :)

Addictive Sweet Potato Burritos

Reviewed: Mar. 27, 2010
Unless I find myself one day with a huge supply of sweet potatoes and kidney beans I won't be making these again. Husband really hates these, I think they are edible... I'm definitely not addicted though. I wanted to like these but the taste is just weird. :'(

Baked Spaghetti Squash Lasagna Style

Reviewed: Mar. 18, 2010
I used fresh basil vs dried and made my own stewed tomatoes vs canned. I only used 1 reg. size can black olives... 8 oz I think. The squash took far longer to cook then 35 minutes, I lost track of how long but I am guessing 1 hour. The last 2 minutes of cook time I turned on broil to brown the cheese. To serve I cut it, all the ingredients stayed together fine. This was the 1st time we've had spaghetti squash, it was okay but don't think we really like it.

Eggplant Parmesan II

Reviewed: Mar. 17, 2010
1st time I have made Egg Plant, read the reviews after preparing... should have sweated the egg plant to get rid of the bitter taste. This recipe makes WAYYYY... too many servings! Gave away half and still have leftovers from the other half. 2 Eggs is not enough for 3 Egg Plant and we threw away ALOT of bread crumbs! Also the temp should be more like 400 and 7-10 min on each side. Used vegetable oil spray when the egg plant refused to go brown, next time will coat sheet in olive oil. And cook time will be more like 45 minutes. Didn't want to use dried Basil so used 1/2 cup fresh basil and mixed it with 15oz Ricotta, 2 eggs, mozzarella, and parmesan. Was pretty good the way we made it, husband said if chicken was in it, it would have been the best chicken parmesan he'd ever had. Next time will sweat egg plant.

Delicious Black Bean Burritos

Reviewed: Mar. 16, 2010
This was quick and easy to make! I thought this was very good and so did my brother. The only changes I made was Olive Oil instead of Vegetable Oil, Sea Salt instead of Reg. Salt and I used chopped frozen onion. I also used a non-stick pan instead of skillet. This was really good, the only change I would make in the future is to use a cheese topping. Very tasty though, Thanks for the recipe!

Chantal's New York Cheesecake

Reviewed: Mar. 11, 2010
This came out awful for me! :'( I used 2 pre-made graham cracker pie shells and still had extra. After cooking they were extremely cracked and thin, the graham cracker crust was hard and nasty. We used the mixer to put together all the ingredients and think we may have over mixed, also probably wasn't a good idea to use a mixer on the egg. :( I am giving this 4 stars because I am pretty sure the mixing was the problem.

Simple Turkey Chili

Reviewed: Jan. 21, 2010
Used Frozen chopped Onion, 1 can tomato sauce and 2 1/2 chopped fresh tomatoes and a bit of extra water, didn't mash the kidney beans... like them whole, added a can of pinto beans, couldn't find my cayenne pepper so I left it out and added a bit of extra chili powder instead. I'm thinking maybe the cayenne pepper is what is making the chili too spicy for some because ours wasn't too spicy at all. :/ Great Chili Recipe! Finally found something that my husband will eat Ground Turkey in vs Beef! YUM! Thanks! :)

Ice Cream Cake

Reviewed: Jan. 19, 2010
I made a white cake w/vanilla ice cream & non dairy whipped topping. This is what my husband wanted for his birthday. I used one of the big round containers of ice cream and made 2 different size round cakes and cut the round top off of the larger cake so the ice cream slice would go on it level, the smaller cake matched the size of the ice cream perfect (just had to trim what melted after refreezing). This cake is by no means an easy task. I took the ice cream out of the container onto wax paper, cut it with dental floss and then wrapped it in the wax paper and put it in the freezer overnight, then I put it in between the two cakes and put it back in the freezer for a few hours. Took it back out of the freezer, trimmed the ice cream that had melted and froze. Frosted the cake, froze it a few more hours and then decorated it and froze it until time to serve. You have to work fast with this cake! Mine turned out a bit lopsided and wayyy too thick. Good first attempt though! If I did it again I would only use one cake and cut that in half (or make two much thinner cakes) and attempt to make the ice cream layer thinner. This was a good cake but the biggest complaint was that the cake was so frozen that it was hard to eat. Not sure what the solution to that is because if you don't freeze the cake it would surely melt the ice cream. :/ Gave my husband what he wanted for his birthday! Thanks! :)

Sarah's Applesauce

Reviewed: Jan. 13, 2010
Used Fuji Apples, cooked on Medium Heat for 30 Min and they still weren't mashable.... gave up and threw in food processor. Shouldn't have added as much sugar as listed (maybe none at all). Good but too sweet. Didn't make very much.... only came out to about a cup when finished. I'll make it again but with some adjustments.

Fresh Tomato Salsa

Reviewed: Jan. 13, 2010
Never used Serrano Chiles... didn't realize they were hotter then Jalapenos. No indication on this recipe that this was a HOT salsa. :( "Fresh Tomato Salsa" led me to think mild/medium for some reason. :/ Got as far as chopping the Serrano chiles, starting coughing non-stop and thought I was having an allergic reaction or something! Bailed out of making this, put everything away in the fridge. Didn't even realize these chiles were HOT until licking some applesauce off of my finger later and thats after washing my hands! Hands are burning now... must have took a bit to kick in.... wish I knew how to get the serrano chiles off my hands... soap isn't working. God forbid I accidentally itch my eye. Horrible Experience!! This recipe needs warnings for those of us who have not worked with these before! >:(

Zucchini and Potato Bake

Reviewed: Jan. 12, 2010
This was a pretty good dish but didn't come out excellent for me. I'm thinking maybe if I cut the potatoes into smaller chunks and tossed before putting into the medium baking dish (was crowded) that it may have turned out better for me. I'll try it again in the future. Thanks for the recipe! :)

This is delicious! Left out the White Sugar, would have been fine to leave out the brown sugar as well. Used Fuji apples since thats what we prefer and used Raspberry Preserves. I will hang on to this recipe! Thanks so much! :)

Raspberry-Glazed Rosemary Chicken

Loved this! We used Chicken Breast Tenders because thats what we had. We didn't like how much liquid was in the casserole dish so we just took some out before adding the preserves. Came out great! Thanks for the Recipe! :)
