Chicken Soup II

Loved this soup! Made a few changes tho, by frying the thighs first, sauteed the veggies in the drippings, skipped the egg noodles and added cheese tortellini since I already had the meat from the chicken. Side of garlic bread and glass of wine was a great meal on a cold snowy day!!

Thin Mint Cookies

Mint and Chocolate! Is there anything better? I used 1 cup of semi sweet morsels 1/2 c butter and 1/2 teaspoon for the frosting. Santa does not get any of these!!

Eggnog Cookies I

I took the others suggestions and cut the nutmeg in half, increased the eggnog to 3/4 cup and used all brown sugar. I did have to bake them for 20 minutes, but I am at high altitude too. I also made a frosting of powered sugar, eggnog and 1/2 teaspoon rum flavoring, then sprinkled chopped pecans on top. Hubby was skeptical, until he tasted one - Glad I made a lot!!

Red Velvet Cake I

Would rate this higher if I could ever get it to come out right. I have been making this cake once a year for the past 25 years sometimes twice a year. Hubby's favorite and it looks so good at Christmas w/ 1/2 red and 1/2 green food coloring. But maybe its the high altitude in Colorado - but never seems to come out correctly!

Chicken Chimichangas with Green Sauce

I added a can of refried beans to my chicken mixture and did only lightly fry these in couple tablespoons of oil in cast iron skilled. Added side of chips with salsa and bean dip plus a margarita - and family Loved it!! Will make again!!

Fabulous Wet Burritos

Amazing!! I put the burrito in the center of the plate, added a small amount of rice to each side, then topped with the sauce, dollop of sour cream and the green onions! This will be made again!!
