Salsa Chicken

To say this recipe was super easy would be an understatement. I couldn't believe how easy it was to put it together. I didn't measure anything.I just eyeballed it. My chicken was a little thick. So I gave it a few extra minutes before topping it with cheese. I decided to eat it like a taco: with lettuce and warm flour tortillas. I also ate it with sour cream. Next time I'll try topping it with queso cheese and shredded cheddar. Definitely a good quick meal and it seems to be good when you have to feed a lot of people.

Southern-Style Oven-Fried Catfish

I just finished eating these and I thought they were great. They were easy to make. Because they were baked in the oven, I don't feel like I ruined my diet. I increased the cooking time by about 10 minutes to accommodate thicker fish fillets. I kept it pretty simple and seasoned my fish with season salt, salt and black pepper. I was so ready to eat, I forgot to take a picture. I'll be making these again soon. So, hopefully I remember to snap a pic on the next go round.

Corn Tortilla Chips

These were really good. I baked the first batch after reading some of the reviews and they came out super good. I fried a second batch and followed up by baking them...they were even better. I know baking is a lot healthier but frying them first tastes so much better. Thanks for sharing I'll be making these a lot more in the future.

Eggless Peanut Butter Cookies

I was out of eggs, didn't want to go to the store and REALLY wanted some peanut butter cookies. This recipe was perfect. I used butter instead of shortening and they turned out great. I also cut the recipe down to make about a dozen since I was only baking them for my husband and myself. Thanks for sharing...I'll be using this more often.

Catfish Cakes

I've made this recipe twice so far and I love it! It's one of those recipes that tastes like it took a tone of work but really didn't. Instead of Old Bay Seasoning, I lightly seasoned them with Seasoned Salt, Pepper, Garlic Salt and a little sage. Before I fried them, I coated them with a little seafood breader. This gave em' a light crispy crust.

Easy Peach Cobbler

This cobbler was incredibly easy to make. I let it cook for about an hour. I also added a bit of cinnamon. I made it about 2 hours ago and it's all gone already. I'll be making this again...probably tomorrow. Thanks for sharing this recipe. It's a winner in my book.

Easy Biscuits

I love this biscuit recipe. I opted to use butter instead of shortening. I think butter has more flavor. I think this is a no fail recipe.

Basic Baked Spaghetti

Grandma's Hash Browns

They were so good. I don't think we will ever buy frozen hash browns again. For the first batch, I gave the potatoes an ice water bath. I also didn't boil them for 20 minutes. I only boiled them for about 10-15 minutes instead. This way, they were easier to grate with the grater and they didn't get too mushy.

Fluffy Biscuits

Not too shabby for my first time baking biscuits from scratch. The first time the texture was a little too flaky. But, after a few tweaks, they came out pretty good for breakfast this morning. I'll keep working on them until I get then just right.

Sweet and Sour Chicken I

This recipe was really good. I seasoned the chicken with season salt, pepper, and garlic powder. I also added a little season salt to the batter. My husband liked it too. He's not a big time bell pepper person so most of those were left on the plate. But, overall, it was really good.

Old-Fashioned Vanilla Pudding

Needed to use left over egg yolk and this did the trick. This pudding was so good. Now, it's my go-to dessert when I have left over yolks.

Sweet Potato Pie II

I have never baked a sweet potato pie in my life. I found this recipe while searching for a good Christmas dessert. It was really easy to make and not time consuming at all. I was VERY surprised when my husband went back to kitchen for a second slice. I will be making this again!!
