Chicken Encilantrada

I loved this! I made it exactly as the recipe states(except for switching out the vegetable oil for olive oil), and it was delicious! I used Pace's salsa verde and it was great! I also browned my chicken with garlic, olive oil, & S&P. I cubed my chicken, but think it would be better shredded. Super easy and a great way to use up cilantro in your fridge. I served over rice and it was perfect. Husband loved it, and it will definitely become a regular at my house. Quick note: I am a cheese lover, but obviously trying to watch my calories, and I love this recipe because it really didn't need it, and I usually think everything needs cheese! ;)

Chicken Breasts with Balsamic Vinegar and Garlic

Great dish! I didn't have chicken broth, so it was not exact, but it was wonderful! I added some milk at the end, and was soo delicious. I will again exactly as the recipe states, only like everyone else, I do feel it was a little too much vinegar. This will definitely become a regular in our home!

Toffee Sandwich Cookies

My husband loves toffee, so I have been trying to find him the perfect cookie. This one is the closest yet. I did not use as a sandwich cookie, but they were delicious. Great dough too! And they came out as pretty cookies too.

Sweetheart Cupcakes

It was awesome! The family loved it! It was an easy way to add some spark to your usual cupcakes. I will definitely use it for other occasions. I added strawberry extract to the pink batter and it tasted great! Will be a staple in our household.

Cranberry, Sausage and Apple Stuffing

Wonderful recipe! Everyone loved it. This is the third year that I have tried a different stuffing recipe, all which have been good. This year - everyone told me to make this my standard. I have 8 adults eating for my Christmas dinner, and this was much more stuffing than needed. Next time I will half it. I also did not stuff it in my turkey.

Buffalo Chicken Dip

Wonderful recipe! I used Frank's Buffalo Wing sauce, 24 oz of chicken and about half the cheddar cheese required. It was wonderful! I made it for Christmas Eve family gathering, and it was such a hit! Everyone loved it! Some thought it was hot, so I was happy I used the Buffalo Wing Sauce. I used canned chicken - which was fine. No one could tell. I was asked to bring it to a New Year's Eve event, so it was obviously loved! Thanks for the recipe!
