I just made this soup and it's amazing! Of course, I changed it a bit like everyone else! :) It's a good starter soup to play with adding other flavors in with the squash. I didn't have potatoes on hand so I omitted those. I baked my squash first, and chopped the other veggies while it was baking. I also added 2 cloves of garlic, curry powder and nutmeg, from another reviewer's suggestion. After I blended with my new blending wand (which I love and find amazing!) I added one whole can of coconut milk, and some sea salt and red pepper flakes to finish. Awesome!
