Day Before Mashed Potatoes

These were fabulous...even though they aren't very good for you! Use low fat sour cream, cream cheese and you will reduce half the fat. I think it's better to cook them the same day you serve them...say 4 hours earlier and then refrigerate and re-heat.

Awesome Slow Cooker Pot Roast

EXCELLENT..just like everyone said! If you are going to use a smaller roast, say 2-3 pounds, do not overcook. 5 1/2 pound is great at 10 hours but 2 1/2 is perfect at 6 on low.

Soft Christmas Cookies

Once you make these, you will make them over and over again...no matter the season. The thicker you cut them out, the better. I find if you cut them thinner than called for, they get a little to crispy. People have asked if I stole the recipe from a store or bakery!

I hope this recipe gets 100 GREAT ratings because it is excellent! You cannot tell that anything is canned and I surprised many guests when I told them how I made it. Spice it up a notch with canned jalapeno's or a little more green chiles. (Dicing your own jalapenos will increase the heat 10 fold, be careful)

YUMMMY!!!!!!!!!!!!!! You people who did not think there was enough spice are mistaken! Add some red peppers if you need it! I spinkled the juice from a jalapeno on the saute mixture and YUMMY!

Baja Fish Tacos

I impressed a house full of bachelors with this recipe! I ran out of fish and then there was complaining because everyone wanted more! YUMMY! I took flour tortillas, lightly buttered them and cooked on a skillet kind of like a gordita. Put the fish on. Put the sauce on lightly. Then light mexican blend cheese, lettuce, diced tomatoes, diced onions and squeezed lime juice on top. YUMMY!

Easy Salmon

Wow! I don't know what to say but that my fiance said it was the best fish he had ever had! I was honored. He could not stop thanking me and thought I had slaved over it! It is too good to be true. THANKS! Serve with Rice!

Buster Bar Ice Cream Dessert

How could this not be good??!? This was a DUTCH favorite (As my church friends and family called it) in my hometown, Bellflower, CA. Add a half cup peanut butter to chocolate mix for more peanut taste. Buy mocha ice cream for mud pie taste!

Tomato Chicken Parmesan

I put sliced mushrooms, onions, and minced garlic into the tomato sauce for a bit more of flavor. Put over angel-hair pasta. I think the cheese could use some more flavor...maybe a different kind of cheese
