Big Al's K.C. Bar-B-Q Sauce

Reviewed: Aug. 14, 2011
AMAZING. Left this at the girlfriend's place and they ended up using it on just about everything! This recipe makes a lot, so I ended up buy a big ketchup bottle (for the recipe), cleaned out the remaining ketchip, and used the bottle for the leftover BBQ sauce, made it easy to serve later on.

Slow Cooker London Broil

Reviewed: Aug. 14, 2011
This was unbelievable delicious, and so simple! Makes a lot, leftovers make great sandwichs. I actually got caught up at work and this ended up cooking for about 11 hours, which actually turned out for the best! I'm at high altitude (Denver, CO) so that might have been why it worked out. Based on a recommendation from another review I bought a bag of frozen broccoli, carrots and cauliflower and threw them in for about 30 minutes. I also made of box of Garlic Mashed Potatoes. It all went together really well. This made a good amount for the GF and myself so we ended up putting this on sandwich bread for lunch a few days later.

Baked Ziti I

Reviewed: Aug. 15, 2011
CAUTION: THIS WILL CAUSE A FOOD COMA, but it's sooo good! It's actually more like a lasagna then the Baked Ziti that I'm used to at the restaurants. I ended up altering the layers like other comments mentioned: sauce, ziti, sauce, provolone, sour cream, ziti, sauce and then mozzarella. I couldn't find shredded provolone so i ended up using one of the 8oz slice bags from the grocery store and just layered them evenly. Next time I'm also going to use half an onion, a full onion was a little much for us non onion lovers. We covered it while it baked with tin foil, then removed the foil for the last 5 minutes. I'm going to do about 20 on and 10 off next time, to get a nice golden top for the cheese next time.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Aug. 16, 2011
I love these cook all day long meals, and then one was terrific! I took the advice from some of the other commenters and added a can of black beans about 30 minutes before serving. I also used Mission Tortilla Strip chips, instead of making my own, and subd chicken broth for the water. Which was easy as it ended up using the entire 32oz chicken broth box. Added mexican cheese once served and it was delicious!

Marinated Flank Steak

Reviewed: Nov. 27, 2011
I moved from Houston, Texas to Boulder, Colorado and had a hankerin for some texmex style fajitas. I used this marinade on 2 lb of skirt steak overnight (12 hours). It turned out great! Made this for some friends that just got relocated up here and everyone raved about it. Definitely a favorite!

Quick and Easy Pizza Crust

Reviewed: Apr. 23, 2012
Super easy! After mixing everything, I covered it with saran wrap and then a towel and let it rise for about 5-10 minutes. The dough was so easy to work with. It was a little too hydrated in the altitude, but after adding more flour it worked out great. Now that we've got a foundation, we'll start trying to add herbs for more flavor

Original Homemade Italian Beef

Reviewed: Jun. 12, 2012
Great flavor overall. Goes well with kaiser rolls or bratwurst buns, dijon, and cheese. Next time I think we'll try a jar of hot pepporcini peppers instead, give it an extra kick.

Grilled Chicken Thighs Tandoori

Reviewed: Oct. 14, 2012
We don't have access to a grill, so we put this is a glass pyrex and baked for about 20 minutes on each side, for a total of 40 minutes. We set the marinade for only about 5 hours, and it still came out pretty good. The next time we make this it will be broiled to get the skin more crispy, and we'll add something to give it a bit more kick. Overall pretty good, looking forward to our next rendition.

Pumpkin Turkey Chili

Reviewed: Oct. 14, 2012
THIS WAS AWESOME, just what we were looking for on a cold day. We added black beans and corn, cuz it's not a chili until it has beans! We followed some other recommendations: "one can each of corn, black beans, and green chilies, about 2 tsp each of cumin and corriander, about 2 tbsp orange juice concentrate, about 1 1/2 tbsp honey, 2 bay leaves, more salt, about 2 cups of tomato juice, about 1/4 tsp red pepper flakes for some heat. Slow Cooker Beef Stew IV

Reviewed: Oct. 28, 2012
This was really good! Served with french bread and mashed potatoes. The stew made a great gravy. We made a lot of changes including adding anchovies to bring out a more beefy taste. Heard about that lil tidbit on America's test kitchen. Don't worry, doesn't taste like anchovies at all!
