Very delicious, kind of reminded me of a low carb lasagna! I used my bf's awesome, homemade recipe for the spaghetti sauce (which I added sliced mushrooms to). I used a pre-grated Italian cheese mix that had parmesan, romano and other Italian cheeses. Before making I read in some of the reviews that it tasted a bit bland. I'm guessing that is probably due to the kind of spaghetti sauce that they used since that is obviously the main flavor in the recipe. Our eggplant parmesan was far from bland. The one thing that I would probably do next time is to use a peeler to take the skin off the eggplant since the skin made it a bit too chewy for my liking. I would also make sure to cut the eggplant slices thinner.
