Red Skinned Potato Salad

I like to use this recipe as a base to add more ingredients. I can't believe this potato salad didn't call for any Dijon mustard or paprika. Those two things make an average potato salad into something so much more flavorful! I added these extra ingredients according to taste as well as some chopped pickles.

Oven Scrambled Eggs

Followed the recipe exactly and it was very good. Although next time, I would cut the amount of butter in half...or more. There was so much butter that parts of the top had a layer of it. Other than that it was really good and fluffy!

Kielbasa and Potato Bake

It's a good thing I made a double recipe the first time I made this. It was really good and the boyfriend really liked it as well. I followed the recipe pretty much through and through, just added more garlic and I had one less potato on hand. Great with cheddar cheese on top. If you have guests, this would be great with baked rolls and some sort of veggies on the side! Next time, I would add less salt. I'll definitely be making this again!

Baked Omelet Squares

Great recipe but I found that I had to add a couple more eggs & a tad more milk to the egg mixture to fill up the dish. I added mini sweet peppers and fresh spinach. Instead of sauteing the onion in the beginning I just through all of the veggies in the pan, covered with egg mixture then topped with black olives and mushrooms. I didn't add cheese since I would rather use it as a light garnish in the end. It did lack some flavor since the only seasoning is salt & pepper but nothing a little Tabasco sauce couldn't fix! Overall, I just love the flexibility of this dish and now I don't have to make eggs every single morning!

Mexican Bean Salad

Tasty! We love garlic so I roughly tripled the amount of that. A couple reductions I did to make it a bit healthier: 1 tbsp sugar instead of two and 1 tsp of salt instead of 1 tbsp. I did not have hot pepper sauce but sprinkled red pepper flakes instead.

Spinach Quiche

I only had a 16oz package of spinach and decided to just use all of it along with an extra can of mushrooms. The outcome filled two 9in pie crusts. I only increased the amount of cheddar cheese by a half cup for topping both pies. I also only used a little over 1/3cup of butter for sautéing and doubled the egg mixture, though all of the egg mixture couldn’t fit. So in essence, I didn’t have to completely double the recipe to fill two 9in pie crusts. I’m glad I didn’t because it might have been too rich for our liking. We think it came out delicious! It's true, this recipe is very forgiving so if you want to add more of what you love (i.e. spinach) or add tomatoes like some other people have, it will still turn out great.

Chickpea Salad with Red Onion and Tomato

This was a hit on Christmas! I wanted to use raw, dried chickpeas like some suggested but I didn't have the time to soak and cook them so I had to settle for canned. They were still very good! Based on other reviews I added fresh cilantro with the fresh parsley and drizzled balsamic vinegar thoroughly. I would have given it a full 5 stars but I know it would have been too plain without the added balsamic vinegar (I tasted it before adding it) and fresh cilantro. I think those two should be added to the recipe's ingredients.

Spinach Lasagna III

First time making lasagna and it was very very good. Would have gave it 5 stars but the proportions on some of the ingredients were off. For example, I have no idea how you would fit 20 lasagna noodles in a 9x13 pan. I think I used half of that. Didn't include the 1 cup of parmesan cheese but the result was still very cheesy. Even though this didn't call for meat, I did include 1lb of ground beef to the mixture. I also broiled the last 5 min or so to brown the top layer of cheese. So delicious, will make again!

Eggplant Parmesan II

Very delicious, kind of reminded me of a low carb lasagna! I used my bf's awesome, homemade recipe for the spaghetti sauce (which I added sliced mushrooms to). I used a pre-grated Italian cheese mix that had parmesan, romano and other Italian cheeses. Before making I read in some of the reviews that it tasted a bit bland. I'm guessing that is probably due to the kind of spaghetti sauce that they used since that is obviously the main flavor in the recipe. Our eggplant parmesan was far from bland. The one thing that I would probably do next time is to use a peeler to take the skin off the eggplant since the skin made it a bit too chewy for my liking. I would also make sure to cut the eggplant slices thinner.

Herb-Stuffed Red Peppers

My bf and I LOVED this recipe. Instead of using plain brown rice I used Zatarain's Spanish Rice (it just comes in a box) and I'm glad I did- it added even more flavor to the dish. I didn't have cayenne pepper but I didn't even notice its abscence. My bf just added some red peppper flakes on his to give it a slight kick. I used pecorino romano cheese instead of the parmesan. Also, I used beef broth instead of chicken broth. Lastly, I added some sliced mushrooms. Since I varied the recipe just a bit, I can't give it a full 5 stars since I don't know what it would taste like if I followed the recipe 100%. But it was very delicious.

Crab Legs with Garlic Butter Sauce

First time cooking crab legs and this was very very good! The only thing I was a bit annoyed at (which isn't the recipe's fault) is that it was a bit hard to coat the crab legs with the seasoning and butter. Next time I might try a recipe that has a dipping sauce instead but I would still make this one too!

Triple Berry Crisp

Just got done baking and eating a slice. Very delicious! I'm bringing the rest to my mom's for our New Years Eve dinner (I had to try a slice while it was fresh out of the oven!). I DID make some minor adjustments based on other reviews I read. I added about an extra cup of berries and I also cooked it in the oven for about 20min longer since I wanted the topping to be more crunchy.
