Over the last year I have started working out and eating right and have lost 40 lbs. as a result. I have learned how wonderful it is to know what you're really eating and have discovered that I truly enjoy working with food and being in the kitchen. I love throwing in my own ideas and quirks and seeing how things turn out. From a fast food junkie, dine-out queen to a baking, broiling, boiling machine - I now consider myself a cook... and I love it!
My favorite things to cook
I love baking - bread, cookies, cakes. One of my favorite pastimes is putting together multiple dessert recipes to create new ones for special occassions. For example, for Mother's Day, I took elements from 3 or 4 recipes and created a pineapple layer cake with coconut-lemon filling and coconut icing. And on my mom's birthday I made her a key lime cheesecake with a pecan coconut crust. I like challenging endeavors that leave me in the kitchen for hours with a really pretty (tasty!) payoff.
My favorite family cooking traditions
Thanksgiving! There's no such thing as too many cooks in the kitchen. It's so beautiful to see multiple generations all working together to create a feast for the whole family.
My cooking triumphs
Doing it at all! My mom hates to cook and I could burn water until about a year ago.
Also, I'm particularly proud of the Mother's Day Coconut Pineapple Cake, the Key Lime Coconut Cheesecake, and the Poptart Crust I made for my cousin's peanut butter birthday pie.
My cooking tragedies
Sweet potato lasagna!!! Don't try it. Don't even bother looking it up. Trust me. I have tried and tried to do "interesting" things with sweet potatoes because I love them so much. My hard-learned lesson: they're wonderful just the way that God made 'em and they taste best when you leave 'em alone. Of course I did see a recipe the other day for sweet potato tacos...
