Lemon Syllabub

Reviewed: Feb. 4, 2011
I was going to a dinner part hosted by a bunch of foodies who drink expensive wine, eat cheese I have never heard of and use the word "palate" in their sentences. Needless to say I didn't want to bring my usual spicy popcorn or deviled eggs. This recipe was super easy and a HUGE hit with the foodies. They now think I'm this amazing dessert chef. Next time I will add a little less sugar - I'm not a huge fan of sweet sweets. It takes a while to whip - I used a hand mixer on low until I got impatient and put in on medium - it didn't seem to hurt it at all. I'm excited to experiment with adding flavors and fresh fruit.

Catherine's Pickled Blueberries

Reviewed: Jul. 17, 2011
I'm still in the canning phase but just how it tasted when I put in the jars I'm sure this is going to be AWESOME! Question - how much should the syrup fill up the jars? I would think that it would need to be filled right to the top of the blueberries but I ran out before I could do that for all of my jars. What I might have done wrong: I might have cooked the sauce too long and lost some there (I was having trouble sorting out when it was thick enough to be "thickened"). For step 2 and on - I couldn't get to the berries in 8-12 hours so I put them in the fridge and it ended up being about 36 hours. I used a lot of smaller jars instead of several big ones. Overall I'm sure it will still be great.

Fresh Southern Peach Cobbler

Reviewed: Jul. 17, 2011
I almost didn't make this recipe because, well, the photos look kind of ugly. I made it anyway and it really isn't all that pretty but not as unattractive as some of the pics. The taste is amazing - absolutely delicious. The individual servings are very pretty when you can see the peaches. I served it with vanilla ice cream but it didn't need it. I followed the recipe exactly except I used turbinado sugar instead of white. It is perfect - not too sweet at all (I don't like sweet stuff nor does my boyfriend who loved this). I agree with another reviewer that the sugar/cinnamon topping makes it hard to see if it's "golden brown" - I would make sure to pull it out earlier rather than later if you aren't sure. And like other reviewers I didn't make the slices too thin - but not too thick either...

Mushroom Sauce Baked Pork Chops

Reviewed: Jul. 22, 2011
My boyfriend and son LOVE this. I don't likes but I I don't really like pork chops all that much. My friend from Iowa says this is middle America food at it's finest. For the men in my life this is most certainly the way to their heart. I use a clove of fresh garlic and the pork is from a local farm where the pig was raised with love.

Homemade Fresh Pumpkin Pie

Reviewed: Dec. 1, 2011
YUM! I had been warned that fresh pumpkin has a lot more water in it and can be mushy so I followed a friend's method of preparing: I baked my pumpkin whole (with holes poked in) until soft, put it in the blender and then let it sit in a strainer to get the extra water out for several hours. For the recipe I added an extra egg. It turned out PERFECT and SOOOO Yummy!!! My son this could use a bit more cinnamon but I thought the spices were just fine.
