Homemade Fresh Pumpkin Pie
YUM! I had been warned that fresh pumpkin has a lot more water in it and can be mushy so I followed a friend's method of preparing: I baked my pumpkin whole (with holes poked in) until soft, put it in the blender and then let it sit in a strainer to get the extra water out for several hours. For the recipe I added an extra egg. It turned out PERFECT and SOOOO Yummy!!! My son this could use a bit more cinnamon but I thought the spices were just fine.

Mushroom Sauce Baked Pork Chops
My boyfriend and son LOVE this. I don't likes but I I don't really like pork chops all that much. My friend from Iowa says this is middle America food at it's finest. For the men in my life this is most certainly the way to their heart. I use a clove of fresh garlic and the pork is from a local farm where the pig was raised with love.

Fresh Southern Peach Cobbler
I almost didn't make this recipe because, well, the photos look kind of ugly. I made it anyway and it really isn't all that pretty but not as unattractive as some of the pics. The taste is amazing - absolutely delicious. The individual servings are very pretty when you can see the peaches. I served it with vanilla ice cream but it didn't need it. I followed the recipe exactly except I used turbinado sugar instead of white. It is perfect - not too sweet at all (I don't like sweet stuff nor does my boyfriend who loved this). I agree with another reviewer that the sugar/cinnamon topping makes it hard to see if it's "golden brown" - I would make sure to pull it out earlier rather than later if you aren't sure. And like other reviewers I didn't make the slices too thin - but not too thick either...
