Apple Pie Muffins

Wow! I am so glad I read the reviews before I made this and went with the reviewer that said they are perfect just the way they are! I had reservations as I made these just the way the recipe said, without any spices....but I went with it. It makes for a super moist and apply muffin. The streusel topping adds just the right amount of cinnamon. Take my advice and make these the way they are written. My only difference is that I got 23 muffins as opposed to 12! (my husband is ooohin and aaahing right now!)

Banana and Vanilla Cupcakes with Buttercream Frosting

Light and Fresh Dressing

The only change I made was to replace the 1 cup of sugar with 1/2 cup of honey. It was still pretty sweet, but not too much. My normally picky husband loves this dressing. We finished it up last night and asked me to make more so it would be available for him over the weekend!

Chewy Chocolate Chip Oatmeal Cookies

These are my new "go to" chocolate chip cookie. I put in 1 tsp of baking soda and chopped the nuts in a chopper so they were very fine. I snuck the nuts past my picky kids and they love the cookies! I think the finely chopped nuts gives a great texture. My cookies were not flat at all, in fact, quite fluffy and thick! YUM!

Caramel Filled Chocolate Cookies

This recipe is REALLY good. Perhaps one of my all time favorite cookies ever! I had not made it for several years and my husband requested them, so I made them - and added a twist!! First off I wlll say that I added 1/4 teaspoon of salt. I learned that if you don't put enough dough around the rolo, it WILL explode - I had a whole pan of exploded ones because I was being skimpy with the dough....so of course, I ran out of rolos and had dough left. I remembered that I had some left over mini candbars from halloween - you know - the bite sized ones. We made cookies with butterfinger, snickers, milky way, baby ruth and 3 muskateers in them AMAZING!!!!! I think my favorite is still the rolos, but man....those butterfinger cookies were pretty great, too!

My Favorite Sesame Noodles

Just double this recipe while your at it. It is so yummy you won't be able to keep your paws off it. My 7 year old loves it! I make it with fresh ginger and don't have a micro, so just heat all the ingredients (except the pasta, onions and toasted sesame seeds)on super low heat until it becomes a sauce and just starts to boil.

Butternut Squash Soup

This soup is SOOOOO good. I have been making it for years and am finally leaving a review. The only thing I would add that makes it so rick and yummy is that I roast the butternut squash....I cut it in half. drizzle my pan with olive oil and roast at 400ish until I can easily poke a fork into the butternut. I let it cool then just scoop out the squash into my pot. It adds a whole new dimension to the soup!

Sean's Falafel and Cucumber Sauce

As I write this I have a huge mess in my kitchen that I am dreading cleaning up....I made the recipe exactly as stated except that I switched the baking powder for baking soda. I made 8 nice patties, heated my up the oil and carefully place the patties in the oil. after about 2 minutes they completely fell apart. I ended up with an oil mess of mush that I had to strain. The only reason I am giving this 2 stars is because the cucumber sauce was good and I did put some of the mush in a pita and ate it with lettuce, tomatoes and the sauce....it was ok....definitely NOT worth the mess I am looking at right now!

Oatmeal-Chocolate Chip Cookies

This is a great basic recipe. Chewy and perfect. I froze half of the batch and the frozen ones are sooo good, too. The only addition I made was an extra cup of chips. This will now be my go to chocolate chipp cookie recipe.

Chocolate Mint Candies Cookies

Amazing!! Just made these and they are now going on to the top of my christmas cookie list. I made the cookies a little smaller and used 1/2 a mint for each cookie so now I have more cookies (this is good because my kids gave them double thumbs ups!) Will definitely make again.

Chocolate Surprise Cupcakes

I have been making these for years and I get requests for them all the time. I had decided to make a different cupcake for my son's birthday this year and heard so much griping I am scrapping the other recipe and making these. I follow the recipe to the tee and never have a problem with them. I put Cream Cheese Frosting II on them. Delish!

Strawberry Cake I

WOW! This was excellent. Followed the recipe to the letter and the cake was perfect. Just had to cook it longer then stated - about 50 minutes. I made this with the whipped cream cheese frosting recipie from this site and there was NO cake left and many asked for the recipe. This is a keeper!

Frosted Cranberry Drop Cookies

These are excellent. Great texture and the frosting is a great balance - it sends them over the top. I followed the recipe to the letter except that I used Craisins rather than fresh cranberries. I used these in a cookie swap and must say that I had one of the best cookies there. Will definitely make again.
