I love this banana bread recipe. I've made it many times, sometimes following the recipe exactly and sometimes changing it. Any way I make it, it turns out great. I usually use more bananas than called for (maybe 2.5-3 regular sized bananas) and I use a combination of brown sugar and white sugar. Sometimes I'll add 1 tsp of vanilla and replace the buttermilk with lowfat vanilla yogurt. To make it even healthier, use applesauce instead of oil. I bake it in an 8x8 in glass pan at 325 F for 1 hr. I will keep going back to this recipe whenever I get a banana bread craving.
