Spotted Dog Irish Bread

This was good! I made it to compare it to my M-I-L's recipe she calls Scon (rhymes with Ron, she's from County Caven). I have yet to find any similar recipe to hers or anything called Scon. The closest one likely originated in Scotland according to history. Anyways, her recipe is: 3 c white flour, 1 c white table sugar, 3 tsp baking powder, 1 c raisins (tip: for those that don't want to buy a big box of raisins it's 4-6 of the 1 oz snack size boxes), 1 egg, 1 1/2 to 1 3/4 c whole milk. Preheat oven to 350. Mix by whisk the egg and milk together in a large bowl. Mix the dry ingredients together, by whisk, in another large bowl. Add the dry ingredients slowly to the wet ingredients while mixing by whisk or hand mixer (I use a whisk and then at the end I use a hand mixer to get any lumps out). Stir in the raisins. Pour into a lightly coated glass loaf pan. It will be full, but it does make just 1 loaf. Bake for 1 hour. If a knife inserted in the middle doesn't come out clean after 1 hour, cover the edges with foil and bake longer (20- 40 min). I measure and rip off 2 pieces of foil, lay it on the stove top crossing each other to place the loaf pan in the center and fold up the sides to wrap the pan easily rather than trying to cover the edges of a hot pan with strips of foil. Try it, once cooled a slice is great with a spread of real butter and a cup of tea :)

Fruit Salad with Vanilla Yogurt

Gave it 4 stars because it was time consuming and almost an overload of fruit. I tried this but will stick with my original from 20 yrs ago...vanilla yogurt, coconut (unsweetened is fine since the yogurt and fruit gives this enough sweetness), canned drained mandarin oranges, a diced apple, and halved grapes. Nothing is measured, you decide how much of each you want, depending on how much you make, too. I've even added ground flax to make it healthier. However you make a yogurt fruit salad it is always refreshing! Great summer breakfast or evening snack :)

Basil-Lime Sorbet

Refreshing! I like a reviewer's idea of using this as a drink mixer which makes me think that 3/4 c seeded/peeled cucumber (blended or pulverized) rather than lime juice, and would Also be light and refreshing, and, make a great mixer for a cucumber basil gin gimlet...I'm not even a fan of gin yet I Love a cucumber basil gimlet in summer, it's so light and refreshing ~ cheers!

Crisp Rice Chocolate Chip Cookies

LOVE a crisp choc chip cookie :) Want to get creative...next time I may use 1/2 vanilla and 1/2 peppermint extracts, or use some/all mint choc chips, or maybe I'll try orange extract and semi-sweet chips :)

Coconut and Chocolate Rice Crispies

Had a thought being its Christmas. Might be good to omit the coconut and swap the marshmallows for peppermint marshmallows with the chocolate cereal, or, even split the marshmallows and use 1/2 regular and 1/2 peppermint ones in case all peppermint is too strong. If anyone tries peppermint marshmallows, please write a review :)

Slow Cooker Butter Chicken

I've never had the traditional recipe, so I can't compare it, but i did like it very much! I love the ease of a crock pot, so I didn't Pre-cook the onion since 1) it means I'm defeating the purpose of the crock pot, giving me another item to wash, and 2) the onion will cook in the hot liquid in the pot anyways. I cannot imagine it made much of a difference in the flavor, if any at all. I mixed all the ingredients, except the chicken, together in the crock pot, then added the chicken, and stirred to coat the chicken. To me crock pots are meant to be a 1 step cooking method :)

Butter Rich Spritz Butter Cookies

best spritz recipe i've found yet! instead of almond extract, i opted for peppermint...very lightly mint flavored, the vanilla with it made it such a good mint flavor, and so buttery...yummy! if you like peppermint, i'd add a light peppermint frosting on top and add crushed candy canes: 2 TBSP butter softened, 1 1/2 c confectioners sugar, 2 TBSP milk, 1/8 to 1/4 tsp peppermint extract, 2 to 3 drops food coloring if desired, crushed mint candy or candy canes if desired. in small bowl beat butter until light and fluffy, add other ingredients, beat until smooth, frost cooled cookies and top with crushed candies.
