Tender Tomato Chicken Breasts

Jalapeno Garlic Tilapia Pasta

My Husband's words after his first bite "this sauce would taste great on steak or chicken!" It was easy and taseted great. I do not like HOT and he does. I used 4 peppers diced and I wasn't too uncomfortable. I did cut calories with less butter and half and half cream. I followed others suggestion with 2/3 cup cream and 1/3 lemon juice. I made the suace in it's own pan and used rice and garnished with cut tomatoes at serving. ENJOYED it very much!

Raspberry Tilapia

didn't care for the Vinegar. Even the smell of it cooking was not entising. We ate it, but didn't enjoy it.

Banana Crumb Muffins

So good! One thing for begining cooks: LIGHT BROWN SUGAR ONLY. I bought dark brown sugar by mistake. The dark sugar carmalizes and runs off to make a big mess! I also subsitute whole wheat flour to find no difference in quality! I find we don't eat as many bananas right away so we have bananaa ready for muffins!

Hudson's Baked Tilapia with Dill Sauce

Real Chiles Rellenos

My husband would order Chiles Rellenos every time we went to any Mexican resturaunt. After tasting "mine"... this recipe...we no longer have to go OUT for his favorite dish. I will stage peppers frozen so they can be cooked at any notice.
