One Bowl Chocolate Cake III

I made this in to cupcakes, and they were very good. Moist, yet not wet. The one change I made that I highly recommend is adding chocolate chips. I poured the batter (very thin, I know, but it cooks up!) into the cups, and then I sprinkled chocolate chips on top so they didn't sink too deep. It was perfect! Super easy, and also dairy-free (since I used soy milk and no one noticed!).

Texas Chocolate Frosting

This recipe is really, really good. I don't generally like chocolate frosting because its too heavy, but this one is really light and delicious! I used dairy-free margarine (dairy-allergy) and then I whipped it with my mixer for several minutes until it was light and fluffy. Perfect! Wouldn't change a thing! It topped my chocolate muffins perfectly.

Key Lime Pie VI

This is the best recipe for making key lime pie (or lemon if you switch the juice) if you are lactose intolerant and allergic to dairy. I make this with vegan margarine and it is so good. However, I don't like the merengue, so I make it without the topping.

Graham Cracker Crust

If you add more butter, it makes more of a cookie crust, if you add lest, the crust is lighter and better for berry pies. Works perfectly as a dairy-free options with vegan margarine.

Jo's Rosemary Bread

I have made this bread many times, always in the bread machine. It turns out wonderful! I use extra italian herb seasoning to make it really flavorful, but the rosemary is just right as is. My friends and co-workers love when I make this and always ask for more! This is my favorite bread recipe ever.

Delicious Ham and Potato Soup

I have a dairy allergy, so I make this recipe using dairy-free margarine and I use more chicken broth instead of the milk. Even with those changes, it turns out WONDERFUL and all my friends love it. I like extra ham and celery, but its a very flexible recipe. Thanks for a perfect soup!
