Big Soft Ginger Cookies

I followed the recipe to the "T" the first time and they were great. Second time I used OJ instead of water but over baked them a little. Third time I made them and did the following changes: used OJ instead of water, butter instead of margarine, and used 1/2 cup white sugar and 1/2 cup brown sugar. Third time was the ultimate winner. These were so delicious and I'm not even a big fan of ginger! I took it to work and someone told me the cookies made her day. I would definitely makes these again and again! I also put the dough in the fridge for about 30 minutes prior to shaping them. The negative reviews are interesting. I'm not an expert cook but this recipe contains a lot of wet ingredients (e.g. water and molasses) so expect the dough to be a little more runny than usual. Don't expect it to look thick and crackled like the picture (the person obviously modified the recipe). If you want it to look exactly like the picture then you'll have to tweak the recipe. I think the main culprit of the runny-ness and greasiness is margarine. Margarine is softer and contains more oil than butter. Slow Cooker, Easy Baked Potato Soup

So scrumptious! I pretty much followed the recipe. I didn't have seasoned salt on hand so I made my own (look online for recipe). I also couldn't find real bacon bits so I fried up my own bacon and then chopped them into little piece. I think using freshly cooked bacon gives a more flavorful soup. Only suggestion that I have is to chop the potatoes into smaller pieces (approximately 1 inch cubes or less) so that all the potatoes cook evenly and it's easier to eat.

Szechwan Shrimp

Delicious and easy. I used raw shrimp as it taste better (usually cheaper) and it only takes less than 5 mins to cook. I would also suggest doubling the ingredients for the sauce. If you don't like spicy then reduce the red pepper flakes.

Baked Honey Mustard Chicken

I don't think it matters that much what kind of mustard (I used spicy brown mustard) you use as the honey cuts down the mustard-y taste. I also cut down the paprika amount as suggested by another reviewer but again I don't think it made that much difference. I also took the suggestion to cover the dish with foil for the first 30 min which I think was a mistake. I felt that it prevented the honey mustard mixture from "baking" onto the chicken. Don't know if the mixture was suppose to end up that runny. Not sure if I'll make this again but if I do I'm just going to follow the exact recipe but maybe marinate the chicken in the mixture for a bit.

Baked Lemon Chicken with Mushroom Sauce

I seasoned the chicken and even put garlic in the mushroom sauce yet it was still pretty bland. If I were to make it again I think I would put more lemon on the chicken. I also don't think the sauce really needs all that flour. It was way to thick and I put in a lot of chicken broth!
