Pasta Pomodoro

This is really good and easy to make. I used two cans of diced tomatoes (not drained), and I had to use dried basil since I couldn't find any fresh. The next time I make this, I will cut back on the pasta or double the sauce.

Mint Chocolate Chip Cookies

These cookies are really good, but you have to be a big mint fan. I couldn't find the mint baking chips so I crushed up some Andes Candy (it takes almost an entire box of the candies for 1 cup). I used 8 drops of green food coloring and my cookies had a nice light green color.

Apple Pie by Grandma Ople

This pie tastes really good, but I did have an issue while making it.. I couldn't get the butter and flour to form a paste. Maybe I did something wrong, but I must have stirred the mixture about 20 mins before I just gave up and added the other ingredients. It still tasted awesome!

Rainbow Clown Cake

These cupcakes are awesome! They are colorful and great for special occasions. I used Betty Crocker gel colors, they turned out very pastel- good for a baby shower. Next time I will use Wilton colors for a brighter color palette!

These are really good, but they are very messy to make. The peanut butter was sticking to my hands so bad I had to pop the PB back in the fridge for a couple mins before I could continue. I let my PB chill for about 3 hrs after forming them into balls, but they were still too soft. Next time I will put them in the freezer before dipping them. Since my PB balls were so soft, I had a heck of a time dipping them in chocolate since they wouldn't stay on the toothpick. I ended up just throwing them into the chocolate and coating them completely. They still tasted delicious :)

Tantalizingly Tangy Meatloaf

This is by far my FAVORITE meatloaf! It is SO good and I love the sauce (I always make extra). I usually serve this with egg noodles and a veggie. My grocery stores don't have pineapple preserves so I use Smuckers pineapple/apricot jam.

Taco Pie

We thought this was great.. a good alternative to boring tacos. I did add a can of corn, rotel tomatoes, and kidney beans. I also used 1 1/2 lbs of hamburger and almost 2 packets of taco seasoning. This recipe is quick, easy, and tastes great!

Slow-Cooked, Texas-Style Beef Brisket

This was awesome. I scaled the recipe down to 6 servings, and I used a 3lb pot roast (brisket is nearly impossible to find where I live), cooked it on high for 4 hrs, and I also doubled the sauce. You couldn't taste the coffee at all and the meat came out very tender. I will definitely be making this again!

Sturdy Whipped Cream Frosting

My only complaint about this frosting is that it was not very sturdy! I made it exactly as directed and took it to a BBQ. I left my cupcakes inside the house but even so, they melted. The flavor is very good and the almond flavor is very noticeable (if you don't like that flavor, scale it back or leave it out). The next time I make this, I will try using regular cream cheese instead of the reduced fat-- I think the red. fat cream cheese gives it a 'tangy' flavor. Overall, this frosting is very good.

Simple Lasagna

Great lasagna.. only thing I didn't do was add the water to the edges of the pan- not sure why you would want to do that? Make sure your top layer of noodles is completely covered with sauce and cheese so it doesn't get crunchy.

Delicious! So easy to make, and tastes great. Be careful though, my gel didn't even take 2 mins to cook. I did used reduced fat cream cheese and it was wonderful.

Absolutely Fabulous Portobello Mushroom Tortellini

I thought this was just ok. I followed the recipe exactly, and made my own alfredo sauce. The portobello sauce was very thin and I didn't think it had much flavor. My husband liked the plain alfredo sauce better than the portobello sauce. Overall, I don't think I'll make this again.

Super-Simple, Super-Spicy Mongolian Beef

This is really good! I don't like spicy food so I didn't add any red pepper, and it still turned out really good. I added a can of La Choy Oriental vegetables and sauteed them with the green onions; I did not think this was too salty.

This recipe is good as is, but it needs more. I really liked that it is healthy, and I added a ton of veggies.. but next time I'm going to add more spices, and definitely more salt. I did have to add some cornstarch at the end to thicken it up.
