Peanut Butter and Pumpkin Dog Treats

Reviewed: Dec. 13, 2010
These were easy to make and my dogs loved them. I didn't have any pumpkin so I used chicken broth as a substitute.

Black Magic Cake

Reviewed: Nov. 24, 2010
Awesome! I used Pikes Place coffee from Starbucks and my cakes had a very subtle hint of coffee. The cupcakes were so moist, they even stuck to my fingers. This cake is really easy to make and don't be put off by the liquid looking batter, it will fluff up in the oven.

Cheddar Beef Enchiladas

Reviewed: Nov. 23, 2010
This is a good, quick dinner. I forgot to add the rice, and I used 4 tortillas.. I like my enchiladas really full, I think using 10 would be too many. Tastes good and its easy.

Pumpkin Chocolate Chip Muffins

Reviewed: Nov. 21, 2010
I liked the taste of these muffins, but I did follow other user reviews and doubled all spices and used brown sugar. My muffins stuck really bad to the liners and didn't rise very much.

Mint Chocolate Chip Cookies

Reviewed: Nov. 17, 2010
These cookies are really good, but you have to be a big mint fan. I couldn't find the mint baking chips so I crushed up some Andes Candy (it takes almost an entire box of the candies for 1 cup). I used 8 drops of green food coloring and my cookies had a nice light green color.

Chicken Florentine Casserole

Reviewed: Nov. 9, 2010
This is the first time I have ever tried this dish and I think it's my new favorite! This is delicious! I made it according to another user review- sauteed the spinach and mushrooms in a little butter, cover the bottom of the pan, placed the raw chicken on top, then added the sauce and baked it for about 35-40 min (I also left out the bacon because I can't stand the stuff). It is amazing. The chicken is moist and tender and the sauce is soooo good! I recommend doubling the sauce. Must try!

Apricot Chicken I

Reviewed: Nov. 6, 2010
This is very good. I only used 1 packet of the onion soup mix and it was perfect- not too salty, and not an over powering onion taste. I doubled the sauce and served it with egg noodles.

Chocolate Chip Cheese Ball

Reviewed: Oct. 31, 2010
This is amazing!!! I made it exactly as is, and I was licking the bowl clean! It tastes like cheesecake. My only complaint was that it was really soft. I was able to shape it into a "pumpkin", but I'm not sure if it will hold until my party starts.. either way though, even if I have to put it in a bowl and serve it like a dip it will still taste awesome.

Buttercream Icing

Reviewed: Oct. 28, 2010
I made this recipe exactly as stated. It was very, very sweet, but it still had a pretty good taste. I did have to add about 1 tbsp more of milk to get the correct consistency. Next time I think I will cut down about a cup of sugar. I made it to frost an eggless chocolate cake called crazy cake (also from this site)..

Easy Chicken Tetrazzini

Reviewed: Oct. 8, 2010
I gave this 4 stars because I had to modified the way that I made it. I used 1 can cream of chix, 1 can cream of potato, 1 can corn, and I added 1/2 tbsp of crushed garlic, some parsley, and salt and pepper to taste. It turned out really good but I think without these modifications it would have been pretty bland. I will make this again experimenting with spices and veggies.

Crazy Cake

Reviewed: Oct. 3, 2010
Do not be afraid to try this cake, it is SO good!!! By not using any butter or eggs, the fat and calories are significantly reduced without giving up any taste. To me, this cake tasted similar to coca cola gave, it was awesome!

Slow-Cooked, Texas-Style Beef Brisket

Reviewed: Oct. 3, 2010
This was awesome. I scaled the recipe down to 6 servings, and I used a 3lb pot roast (brisket is nearly impossible to find where I live), cooked it on high for 4 hrs, and I also doubled the sauce. You couldn't taste the coffee at all and the meat came out very tender. I will definitely be making this again!

Sturdy Whipped Cream Frosting

Reviewed: Oct. 1, 2010
My only complaint about this frosting is that it was not very sturdy! I made it exactly as directed and took it to a BBQ. I left my cupcakes inside the house but even so, they melted. The flavor is very good and the almond flavor is very noticeable (if you don't like that flavor, scale it back or leave it out). The next time I make this, I will try using regular cream cheese instead of the reduced fat-- I think the red. fat cream cheese gives it a 'tangy' flavor. Overall, this frosting is very good.

Super-Simple, Super-Spicy Mongolian Beef

Reviewed: Sep. 26, 2010
This is really good! I don't like spicy food so I didn't add any red pepper, and it still turned out really good. I added a can of La Choy Oriental vegetables and sauteed them with the green onions; I did not think this was too salty.

Salsa Chicken Rice Casserole

Reviewed: Sep. 25, 2010
I thought this was just ok. It wasn't spicy enough and didn't really have any flavor. If I make this again, I will do some tweaking like adding more veggies and some hot sauce.

Peanut Butter Cake II

Reviewed: Sep. 25, 2010
This cake was pretty good! I made cupcakes out of it and put a frozen Hersheys Kiss in the middle, the result was a cupcake that tasted just like my favorite peanut butter/kiss cookies. The cake turned out super moist, but not too peanuty. I also made the frosting which may have been over kill. The frosting (for me) was too sweet, but everyone I served them to loved them. Thanks!

Taco Pasta Salad

Reviewed: Sep. 13, 2010
This was actually pretty good. I was a little worried about how the dressing would taste, but it turned out really good. I used a low fat french dressing, left out the green peppers and added a spoon full of sour cream. This is a quick dinner with ingredients that are usually on hand.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Sep. 10, 2010
These are really good. To save time I used toll house mini chocolate chip cookies (the break and bake kind), and put one square in each cupcake. I baked them for 16 min, and they turned out perfect! I frosted them with chocolate fudge buttercream (can be found on this site), and everyone loved them!
