Freaking love this. I made it for dinner tonight and it's a delight. I love the tang of the lime with the hotness of the jalapeno. It's just wonderful.

White Chocolate Cheesecake with White Chocolate Brandy Sauce

This recipe was phenomenal. I did the sauce warm, but then the next I had a piece and just used the sauce cold. It thickened up really nicely. I'm planning on trying using it as an icing drizzled over a spice cake done in a bunt pan. Also I used a honey graham cracker crust which complemented the cheesecake really well without getting in the way. I can't wait to share this with the family over a holiday!

This dish was fantastic. I can't speak to its authenticity, but it was delicious and that's pretty much what counts for me. I found the spiciness just right and I think it clearly lends itself well to variation, which is always nice. The only super minor change that I made from the directions was to sautee the carrots with the onions because I wanted to make sure they got soft because my husband isn't a fan of carrots, so if I can hide their texture he doesn't mind. Clearly though, doesn't really effect the dish overall. Loved it!

Brown Rice and Black Bean Casserole

I LOVED this recipe. I did, as mentioned by other users, upped the spices, and switched the swiss cheese to cheddar but wow! It was so good. I will certainly be adding this to my dinner repertoire. In the future it's the sort of thing that I think if I had chicken breasts some other night of the week I might make two extra just to have them for this later on in the week. It really wasn't that big a deal though to toss two chicken breasts in the oven for half an hour, just a matter of time management.

Swiss Chard with Pinto Beans and Goat Cheese

As previously recommended I switched the pinto beans for black beans. I went a little heavier on the red pepper flakes because my husband and I like a lot of heat. It was absolutely delicious. I served it over basmati rice, I loved it. I didn't put it in the oven as directed. I thought that was a bit unnecessary. In a hot pan you can just stir the goat cheese around and it melts just fine.

Potato and Bean Enchiladas

Delicious. I did, as some mentioned, add sauce to the inside of the enchiladas. I also added a jalapeno and a green tomato to my sauce and a little vinegar. It was really great.

California Grilled Veggie Sandwich

I tried this and I was unsure how much I'd like it, but it was fantastic. I made a couple changes, just small. I wanted to add a little more protein and nutritional value than mayonnaise, so instead of making the lemon garlic mayonnaise I used a white bean hummus. Very easy to make, very yummy. I also used mozzarella instead of feta just because it was what I had on hand. I thought it was great, and my husband loved it too!
