I am a mom and wife to two wonderful people, my husband and daughter are my guinea pigs :) who can sometimes be my toughest critics. Ive worked with a catering business and I thank Susan and my mother, for being such a great teachers!
My favorite things to cook
My favorite THINGS to cook, are comfort foods like meatloaf, and lasagna, i do put a twist on them every now and again. Wanting to try new things is always at the top of my list. I can also whip up AWESOME desserts in no time, my hubby certainly enjoys that in the time it takes him to clear the table I've made something SPLENDID and SWEET to eat! :)
My favorite family cooking traditions
Traditions in my home included my mom doing all the cooking,... not something id want for my own family. :) mom needs a break too! So my hubby and I try to trade off cooking, OF COURSE he runs straight for the grill on his nights. :) I dont mind one bit though. For holidays, thats another story.. I'd like for each person (family and/or friends) coming to the lunch/dinner to bring something they made themselves; nothing store bought. :)
My cooking triumphs
I just recently started to make my own bread when i moved to TN, let me tell you SOMETHING, weather isnt like Texas :) i couldnt get bread to rise here during the winter. Winters are brutal here, so now i know i have to warm a room first and let the breads rise there. :)

Mango-licious Tilapia
This salsa makes this GREAT. My family is not big on red onion, but I LOVE IT on everything! So a big thank you for sharing! (it taste good w/o the red onion too)

Mexican Corn
This corn side dish, is good but a little tasteless if prepared as directed. I added a little more seasonings and it was great along side ALMOST STUFFED PEPPERS, from this site :)

Ken's Minestrone Soup
I didnt know what Minestrone Soup was before i found this recipe! But boy am i hooked, it goes well with just about anything or by itself. Its definitely a keeper :)
