Banana Muffins I
These are quite good (my picky son ate 2 as soon as they had cooled). For this reason I will make them again, but I need to make a few changes. 1. a little bit less baking powder 2. add a little cinnamon & nutmeg 3. spray the muffin papers with baking spray or don't use muffin papers and just spray the tins well (my main complaint is that they really stuck quite badly to the papers) 4. use less sugar - the bananas make them sweet and too much sugar made them a bit too sweet for me. otherwise, I really liked how simple and healthy-ish they are.

Oregon Salmon Patties
This recipe was a wonderful foundation for what turned out to be a major hit in our house tonight. I doubled the recipe and tweaked it a bit. I did not use any reserve liquid from the salmon. I doubled all ingredients, and I added 1/4-1/2 tsp dried dill, 1 tsp old bay seasoning, 2 Tbsp lemon juice, 3 dashes worcestershire sauce, and 1-2 tsp frank's red hot sauce. I also suggest adding 1/2 cup freshly chopped cilantro instead of parsley. To the onion mixture I also added 2 cloves of minced garlic after the onion had cooked for about 9 minutes. This recipe was incredibly well-received with my family...even my 2 and 3 year old children loved it. What a great way to get healthy salmon into their diets!!! Thank you!!!

Brazilian White Rice
I made this recipe tonight, and the flavor was fantastic. The only thing I did differently was that I added more than 2 Tbsp minced onion...probably about 3-1/2. A tip for those of you using jasmine rice: I used Thai Jasmine Rice which is the only rice we eat at home, and the proportions of rice:water were off due to the nature of jasmine rice. The rice was very sticky and wet because 4 cups water:2 cups rice was too much water. The next time I make it, I will reduce the water to 3 cups and report back. Delicious flavor though...I can't wait to try it again with the slight change in water measurement.
