Rhinelander Lentil Soup
This was delicious! Although I made some tweaks as well...used half beef broth half water (with a beef bullion cube) for my liquid. Added garlic (how does one cook with out garlic??!!) and a can of diced tomatoes. I also sprinkled in some red pepper flakes with my veggies while they cooked down in the bacon. Didn't have nutmeg, didn't miss it. I let my soup reduce/simmer for almost 4 hours, if I did that again I would add the potatoes later as they were a bit mushy. I don't really measure when I cook, just used this recipe as a general guideline and it turned out wonderful and full of flavor!

Baked Halibut Steaks
This was pretty tasty! I followed some of the comments: seasoned the fish itself, used the canned toms with garlic/basil/oregano, added some lemon juice and crushed red pepper flakes. It is very easy and simple, but I agree with some others; it is not necessary to spend the big money on the halibut (I just paid $25/lb) because the flavor comes from the basil (I used dried because that's what I had), tomatoes, garlic, feta etc. I think this would be equally as delicious with any white fish: cod, tilapia etc. I just got a bag of "Uncle Ben's" brown/wild rice (micro pouch) and served it on top, yummy!
