This was awesome. My husband, who does NOT like sausage, lapped this up and wants it for lunch tomorrow! I made this last minute and couldn't locate my dry beans, so I had three cans of red kidneys and added one can at the beginning of the simmer time and the other two at the end, when I added this sausage. Next time I will use dry, because I just like to, but this tasted FINE with canned beans.
I also made a bit of a roux, before I added the chicken broth (didn't use water, six cups of broth instead) and it made this nice and thick. Trust me, the sauce is A++, having a it a bit thicker was really nice for keeping it on the beans and rice. Oh, and I couldn't find my thyme...so I just skipped it. I also used a bit more garlic than was called for.
Perfect RBandR....I will make this over and over again. Use the actual Andouille, I cannot imagine this dish with anything else. Seriously, if it's not at your conveniently located grocery store, go out of your way and find it, you won't be sad you did.
I gave this five stars, I would absolutely give it SIX if I could! TERRIFIC!
