Raised Yeast Waffles

Reviewed: Mar. 11, 2012
This was extremely good. I ended up using a bit more flour as recommended by some other reviewers (maybe an extra half cup) and made certain to use properly warmed milk and eggs. My kids were going nuts like little animals and I left it for an extra 15 to rise while I was chasing them down...the batter was bubbling and hissing and had grown so huge by the time I pulled it out of the warm oven! These tasted terrific, the crispy outside gave way to a tender and moist inside...almost bread like..but more airy and light. VERY delicious waffles. Don't hesitate to try this recipe!

Fluffy Pancakes

Reviewed: Feb. 13, 2012
These were fantastic! Very light and fluffy...watch out, they will suck up your syrup very fast, don't put too much on thinking you need more...it's INSIDE the pancake! Mmmmmmm....threw some bananas on these and have been smiling ever since. VERY GOOD.

Spicy Black Bean Soup

Reviewed: Feb. 1, 2012
This soup was INSANE. SO good...I can't say enough good about it! I was out of dry beans so I ended up using two cans of black beans and two cans of black eyed peas in it. AWESOME. I also used andouille sausage instead of just regular ham...the subtle heat this added was out of this world. I HIGHLY recommend getting your hands on some good andouille for this recipe. My two year old and three year old gobbled it right up (but they eat a lot of spicy food) and my husband couldn't stop talking about it and he is normally way "souped out" by this time of the year. OH! Also, I added about a third cup of rice...which was very good and left out the carrots. Also I sauteed the onions, celery, garlic, etc in the bottom of the pan in butter before adding the rest of the stuff. This soup was unbelievable. Seriously, make it. NOW!

Caramels

Reviewed: Jan. 20, 2012
I did a really half-assed job of cooking this caramel...I just had WAY too much going on at once, two sick toddlers, a huge meal to cook at the same time, etc....and it came out WONDERFULLY anyway! I highly, highly recommend this recipe. Caramel I've made in the past has tasted yummy, but never had the smooth consistency I was looking for. This is nice and hard, silky smooth and DELICIOUS!

Angela's Awesome Enchiladas

Reviewed: Dec. 16, 2011
This was incredible...everyone loved it! Oh, and I realized when I got home from the store that I forgot cream of chicken soup....so I consulted the interwebs and ended up with a great recipe to remedy that exact problem: I put three tablespoons of butter in a small pan, let it get nice and hot, whisked into it one or one and a half tablespoons of flour until it formed a nice roux....then I whisked in a half cup of chicken broth and a half cup of milk...and this made, to my surprise...an EXACT replica (except better) of campbells cream of chicken soup. It was so good, that I can honestly say I will quickly whip that together any time I find a recipe that calls for cream of chicken soup. These enchiladas were super, super good. I LOVE enchiladas and these totally hit the spot and were exactly what you think of in your head, when you say to yourself "man, I'd love some enchiladas!"...GO FOR IT!

Cinnamon Rolls III

Reviewed: Dec. 13, 2011
These were fantastic. I followed the recipe exactly, with the exception of using the WHOLE packet of vanilla pudding instead of just half. I've got to say, vanilla pudding is not something I eat, keep in the house or have ever used in a recipe....I will make it a point to grab a couple of boxes next time I'm in the store, so that when I want to make these on a whim I have all the materials I need. EXCELLENT. Oh, also, let them rise for longer than 45 minutes. At the 45 minutes mark, mine were not as large as I would have liked. Closer to 1 hour 15 or so minutes...they were giant. Just like the ones in the mall! These were a knock-out HIT in my house!

Miso and Soy Chilean Sea Bass

Reviewed: Nov. 15, 2011
I gave this two stars because it smelled delicious and that counts for something in my book.....but it DIDN;T get the rest of the three stars because it tasted absolutely terrible. I was SHOCKED when I tasted this fish because, again, it smelled SO good. But it really tasted bad. Too much rice wine or something...I would consider making this again and substituting the rice wine for something else or putting more of a teriyaki spin on it....but never again like this.

Holiday Chicken Salad

Reviewed: Nov. 7, 2011
Truly terrific! I omitted the green pepper (won't next time) and added poultry seasoning to the mayo...I served this in wraps (spinach wraps) that were lined with baby spinach and had a bit of Maille mustard smeared on the inside. Absolutely wonderful. Oh, and I cut down a bit on the cranberries and I cut them up to be smaller (husband has a "thing" about fruit in food) and my kids and husband all raved and gobbled it down!

Flank Steak with Horseradish Sauce

Reviewed: Nov. 4, 2011
This was AWESOME....the sauce was TOO great. My biggest tip with this, as with all mayo based sauce recipes...is to make it ahead of time and let it sit in the fridge over night, just like the marinading meat. It just does something to the flavor of the sauce...something GOOD. Enjoy this! I know we will, again and again. Oh, and I served this with butter pan-fried, cubed red potatoes with rosemary and salt and pepper and some roasted brussell sprouts. Perfecto!

Antipasto Pasta Salad

Reviewed: Nov. 4, 2011
Completely delicious...I "made it my own" with some additions that were suggested by other reviewers and will use this recipe in the future again and again. It was a huge hit, the asiago cheese is perfect (I also used mozzarella cheese and that really made it awesome).

Scallops Mascarpone

Reviewed: Nov. 4, 2011
This was really good. I ended up going with the 8oz package of mascarpone, about four (maybe more) tablespoons of sour cream and a good 1/4-1/2 cup of heavy cream to make the sauce. This was SO delicious. Also, in addition to the asparagus, I made tiny little broccoli pieces and added those as well. I will make this again and again...BIG HIT! Oh oh, and I used two pounds of baby scallops because I find regular scallops to be too big for a meal like this and very expensive.

Authentic Louisiana Red Beans and Rice

Reviewed: Nov. 3, 2011
This was awesome. My husband, who does NOT like sausage, lapped this up and wants it for lunch tomorrow! I made this last minute and couldn't locate my dry beans, so I had three cans of red kidneys and added one can at the beginning of the simmer time and the other two at the end, when I added this sausage. Next time I will use dry, because I just like to, but this tasted FINE with canned beans. I also made a bit of a roux, before I added the chicken broth (didn't use water, six cups of broth instead) and it made this nice and thick. Trust me, the sauce is A++, having a it a bit thicker was really nice for keeping it on the beans and rice. Oh, and I couldn't find my thyme...so I just skipped it. I also used a bit more garlic than was called for. Perfect RBandR....I will make this over and over again. Use the actual Andouille, I cannot imagine this dish with anything else. Seriously, if it's not at your conveniently located grocery store, go out of your way and find it, you won't be sad you did. I gave this five stars, I would absolutely give it SIX if I could! TERRIFIC!

Beef Pho

This was extremely good! I made a whole Pho Platter and my family (even less adventurous eaters) loved it. I served it with a side of Bok Choy, sauteed in sesame oil and garlic and it was delicious.

Original Homemade Italian Beef

Reviewed: Jan. 29, 2010
I was actually a bit surprised at this recipe. I really expected to love it, as I'm a SUPER fan of roast beef...this had all the right "stuff" for me, all the ingredients are favorites of mine. It just didn't come together in the end in a way that impressed me much. I still ate three sandwiches, though, so...!

White Cheese Chicken Lasagna

Reviewed: Jan. 29, 2010
This was simply delicious. The sauce was so good, I put some of it on a piece of bread and ate it like that! I wanted to take a bath in it, it was THAT good. The only thing I might try and "doctor" a bit is the ricotta and chicken layer..it seemed a bit bland in comparison to the rest of the layers...but all in all...cheesy, gooey, deep-down-satisfying meal. I am making it again in a couple of days at my mother in law's house because I think it will impress! On a side note, I prepared this in the morning, while both of my kids were sleeping or busy, giving me time to myself, and put it in the fridge until the evening...it made dinner time a snap and I was able to relax and enjoy my family while it was cooking. I will do that again for SURE!

BBQ Chicken Pizza

Reviewed: Jan. 24, 2010
Absolutely AWESOME pizza recipe. I hadn't ever tried a BBQ pizza..and my picky husband wrinkled his nose...but we were BOTH blown away! Delicious flavor combos, everything on the pizza adds something really nice and it all blends perfectly with a flavor and nice heat that dance on your tongue and leave you wishing you'd made two! Very good balance of flavors!

Moroccan Lentil Soup

Reviewed: Jan. 24, 2010
This was delicious...absolutely delicious. I had some leftover shredded chicken (from my cinnamon and lime chicken fajitas - look it up here, it's awesome!) and two days after I made this soup, I put the chicken in with as I reheated it and tore up some tortillas and put that in...and this reheated into a DELICIOUS leftover soup...so, great the day of and, in my opinion, even better as leftovers! You won't be disappointed!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Jan. 22, 2010
This was absolutely DELICIOUS! Everyone loved it. The only changes I made: More garlic A bit more chicken stock and vinegar towards the end (with a bit more flour to thicken it a bit) Fresh basil instead of bay leaf I did pound out my chicken, I did dredge it in flour....I served it over egg noodles. This was so easy and so delicious...thank you for this recipe, I'm so glad to have it to pull out on days when I feel like eating something easy to prepare which also tastes DELICIOUS. Just...a tasty flavor...very good!
