Lentil Soup

I made this a couple of days ago and I think it's a good base recipe. I did make a lot of changes. I used more broth, one more rib of celery, balsamic vinegar and red wine instead of the white wine. I used only one bay leaf (it had a strong bay leaf taste, so I definitely wouldn't use two). I doubled the garlic, added a dash of cumin, a couple of tablespoons of hot sauce, and eliminated the carrots and parsley because I don't like them. I used a frozen pepper/onion blend instead of fresh onions and I didn't cook any of the vegetables first. I just put all the ingredients in the crock pot and let it cook on high for about 5 hours and low for another 2. I didn't have to add any additional liquid because I like my soup thick. If you like a thinner soup, you might have to add more broth or water. I will say that if you don't like tomato based soups, you will NOT like this unless you make changes. The crushed tomatoes and bay leaf make it remind me of how spaghetti sauce tastes. The main reason it didn't get 5 stars is because it still seemed like it was missing something. Next time I will add some ground beef or stew meat and see if that helps.

Buffalo Chicken Dip

This stuff is great! A friend brought it to a Christmas party and when she told me what it was, I had to try and make it myself. I used 2 (12.5 oz) cans of chicken breast, about 1 1/4 cup of Frank's Hot Sauce (the original), probably about 1 1/4 cup of shredded sharp cheddar and since I didn't have ranch, I used about 1/2 cup of sour cream and 1/4 cup of savory garlic Cookin Creme cheese. I added garlic powder and some Mrs. Dash to spice it up a bit. I cooked it on the stove as indicated, then transferred it to an 8x8 metal pan, topped with a bit more cheese and baked for 15 minutes at 350. It turned out great even without the dressing.

Almond Celery Bake

I followed the recipe except I seasoned my breadcrumbs, used fried onions instead of almonds since I don't really like them and added a bit of cheese to the top. I didn't really enjoy this dish, there was just something lacking.

Quick and Easy Alfredo Sauce

This is a great alfredo sauce if you are short for time and/or cooking impaired. I can mess up any recipe, but this one turns out well every time. I use less butter than it calls for and buy the flavored cream cheese (the garlic flavored is awesome in this). I also use 2% milk. Toss the sauce with some of the refrigerated or frozen cheese tortellini, some peas and bacon/ham/pancetta and you have a great meal!

Chuck's Favorite Mac and Cheese

I will warn, this is NOT a traditional mac and cheese. It's very tangy and the consistency is different. That being said, it was GREAT! I followed the recipe except I had a 12 oz block of sharp cheddar that I shredded by hand. I used probably a cup of shredded Parmesan, 1/4 cup of TGI Friday's bleu cheese dressing and 5-6 dashes of red Tabasco to give it a kick. You will definitely want to add about 1/2 cup of milk to keep it from being dry. I crumbled Ritz (veggie flavored) crackers on the top and sprayed it lightly with Pam instead of using butter. Baked it for 30 minutes and it turned out beautifully. I am a very amateur cook - the extent of my abilities is usually the microwave, so the fact that this turned out so well for me shows how easy it is.
