About this Cook
I'm a retired Navy musician. I play piano for my church on Sundays. and give clarinet lessons Saturdays. Weekdays, I work for the USMC. I have four children, two girls and twin boys. I have a house rabbit and seven cats. In addition to playing clarinet, piano and flute, I enjoy making jewelry when I have the time and the materials.
My favorite things to cook
I enjoy trying new ways of cooking vegetables, and other vegan recipes. It's also fun veganizing traditional favorites.
My favorite family cooking traditions
I really enjoy baking zucchini bread loaves to give as gifts for Christmas. I also enjoy cooking with my kids and sharing the work and the meal.
My cooking triumphs
Butternut Squash with pasta and sage is something I was surprised to find my kids like. They also liked vegan colcannon, although they added mayonnaise to it.
My cooking tragedies
I've blown up an egg in the microwave - more than once.

Vegan Pancakes
Excellent recipe. The pancakes were not too heavy. Make sure if you cook with oil that you don't use too much. They will soak it up. I intend to try these with a little variation, perhaps with whole wheat flour and some chopped walnuts.

Vegetarian Chickpea Sandwich Filling
We made this pretty much as the recipe called for, except we didn't have any celery, and we used lime juice instead of lemon juice. We also added a little more mayo than it called for and used fresh dill instead of dried. I highly recommend fresh dill, because the dill flavor and aroma is more pronounced. Hopefully we will have celery next time we make it. It tasted like egg salad (in fact, I believe it is BETTER than egg salad!) We filled whole wheat pita bread with it and ate it that way. My teenagers really liked it, so we will definitely make it again.

Vegetarian Lime Orzo
Wow! This was GREAT! My kids LOVED it! I might have used a bit more than 2 T olive oil, but the browning of the orzo really made it taste really nutty. I think the next time I will use diced tomatoes instead of the whole stewed ones and see if that makes a difference in the texture. The parmesan gave it an Italian flavor that I loved. Romano cheese would also work. I just can't get past browning that orzo. That makes it soooo perfect! Shredding the veggies is a must, since it is in keeping with the texture you start with the orzo. EXCELLENT recipe!
