This is the best meatloaf I've ever tasted, but I did do a few things differently. I agree with the other reviewers that the ketchup and brown sugar is better on the top. Also, to make things easier, I used a packet of dried onion soup mix instead of having to chop an onion. The soup mix also has plenty of salt and seasoning already in it, so I didn't need to use salt and pepper. Instead of cracker crumbs, I usually use plain bread crumbs or crushed croutons. One thing I have noticed - I do not taste the ginger at ALL in this recipe. I don't know if it is because I use the onion soup mix and maybe the flavor gets lost in it, or if the recipe should call for more ginger. I've tried making it with and without the ginger and I taste no difference.
