California Grilled Veggie Sandwich

Mmmm So delicious. Definitely better with some portabell mushroom slices. It adds that "meatiness" to it. I usually grill up whatever I have of the following list - zucchini, summer squash, mushrooms, red (or green or yellow or orange) bell peppers, eggplant, onion, beefsteak tomato. I toast the bread on the grill and melt the cheese on it before layering on the veggies and the sauce. So satisfying.

Playgroup Granola Bars

These were very good! I replaced the oil with 1cup of applesauce to make it healthier and also cut the brown sugar down to 1/3c. I added dried cranberries and pumpkin seeds. Only baked for 20 minutes. Overall, I think I'll be making a couple tweeks to this recipe to really make it my own. But a very good start! I'm looking forward to trying it with peanut butter

Broccoli and Tortellini Salad

I would actually probably give this 3 and a half stars but I think it could be better with some tweeking. The tortellini was very good (I used a prosciutto and cheese refrigerated kind) and I really liked the idea of blanching the broccoli. I replaced the raisins with unsweetened dried cranberries and the sunflower seeds with pumpkin seeds. I didn't have cider vinegar so I used red wine vinegar. I also sauteed the onions in the bacon grease (I know, I can't help but be a health nut!). I think that the dressing was way too sweet, even thought I cut back on the sugar (1/4c sugar to 1c mayo). Maybe I'd add more vinegar next time. I also thought it could use more bacon. I enjoyed the first few bites of this, but after half a bowl, it just got too sweet.

Brown Sugar Meatloaf

We were pretty disappointed in this meatloaf. I followed a lot of the reviewers' suggestions. I used seasoned bread crumbs instead of saltines, I added garlic and celery to the mix, used a little less milk, added more than the suggested amount of spices. After all this, we still found this to be pretty bland. The glaze was good, but we doctored that up with some of the suggestions too (less sugar, add dry mustard and Worcestershire sauce). My boyfriend put barbecue sauce on it. Not a good sign.

Cranberry Pistachio Biscotti

Great recipe! I followed the advice of other reviewers and upped the cranberries and added less pistaciao. These were so wonderful and I game them as homemade christmas presents last year. Even my cousin from Italy said they were the best biscotti he ever had!

Beef Tenderloin With Roasted Shallots

SOOO DELICIOUS. I made this twice! I didn't have port wine so I used the red that we were drinking with dinner and added a little brown sugar to it. Besides that, I didn't change anything the first time except pulling it out a little early (we like our meat medium rare). The second time I actually made the sauce and blended it with the shallots as many reviewers suggested. I didn't bled all the shallots, though because I wanted to eat some whole as well. This was very good and I froze the leftover sauce and have used it since.

Creme Brulee French Toast

Mmmm this was sooo delicious. I did make a few changes: I did NOT take the crusts of the bread. It gave some stability to it while it was soaking. I also bought a whole loaf of French bread and cut it myself so I could get nice big slices. I took some other reviewer's suggestions and added orange zest and some of the juice (made it EXTRA delicious) and substituted real maple syrup for the corn syrup. I don't have corn syrup and it just made sense. This was a really delicious breakfast but it IS VERY RICH (which is really why it's such a treat). You don't need syrup for the top and I would suggest serving it with some fruit and breakfast meat on the side. I think that if you were to completely fill up on this french toast, you may have a tummy ache later.

Stuffed Brie

Yummy and wonderfully rich and sweet! The grocery store was out of brie wheels so I used a large wedge, which was probably a lot messier when melted but still very delicious! Even people who didn't like brie were loving this. I served it with baguette slices and it worked out great! Mine definately wouldn't really work with crackers unless they were very large crackers. Wonderful!

Blue Bacon Stuffed Mushrooms

I made these for a new years appitizer and they were delicious. I added spinach to the sautee about a minute before it was done. I also forgot the bread crumbs when making the mix so I just sprinkled some on top and they turned out fine. Instead of large mushrooms, I used fairly small mushrooms because I wanted them to be bite sized and they were still really good! I only got one because they went so fast! I had some extra filling so I froze it and plan on making more soon!
