I have been making this bread for 40 years, w/ the exception of the oil,making this fat free :0). For those who wished for a crunchier crust, after brushing w/ egg white(beaten w/ a tablespoon of water),sprinkle on some seeds,white or black sesame seeds poppy seeds, flax seeds, makes "everything" bread. Place a baking pan (9x13) in the bottom of the preheating oven, then pour boiling water into it, creating steam. After 20 minutes of baking time, brush the bread(lightly) w/ cool water every 10 minutes of remaing baking time. It will make a nice crust. Have fun, bread making is so theraputic.
