Mmm-Mmm Better Brownies

no matter where this recipe came from, i'm glad it was posted and featured in a newsletter. holy cow, i'm on my second square hot out of the oven and i can't get over how delicious (and easy to prepare) they are. made as instructed, including walnuts, and added mini choc chips and drizzled with caramel before cooking. used an 8 x 8 pan, forgot it would take 30 minutes, checked them every 5 from 20, took them out at 32. and thanks to the engineering geniuses at kraft, i was able to squirt an ample amount of cool whip in a can onto this delectable treat. fantastic!

Chunky Banana Nut Chip Ice Cream

there's no denying this ice cream is delicious as is. i just enjoyed another bowl last night with a little chocolate syrup. it was the perfect recipe for me because i had a bunch of bananas that were getting very ripe and i just couldn't bear making (and eating) another loaf of banana bread. the only thing i really did differently was use about 3 cups of heavy cream and 1 cup of half and half because i'm cheap and wanted to make another ice cream from this site, blueberry cheesecake (fabulous!) and didn't want to buy two quarts of expensive heavy cream. while this recipe isn't nearly as rich as the blueberry one, it's still fantastic. nuts, chocolate, chips, bananas...what's not to love?

Awesome Baked Sea Scallops

i kept pretty true to the recipe except i didn't have shallots so just used onion and forgot to put in the nutmeg. for me, this recipe was just too heavy and fattening. i found the buttery/oily bread crumb mixture to be overbearing and felt that it overshadowed the scallops. wanted to try it because it sounded quick and easy and i had all the ingredients. it was easy, but it just seemed like a waste of the scallops. my husband, who loves scallops, hardly touched them.

Vegetable Orzo

i've had a bag of orzo in the pantry for a while but never knew what to do with it. decided to make this along w/the awesome baked sea scallops from this site. personally, i loved it as is. the balsamic vinegar provided enough flavor for me. my husband thought it could have used some additional seasoning. i did sprinkle just a tiny bit of parm on it, then decided i didn't want to over-fatten something that was relatively healthy, especially with those scallops. i would definitely make it again, though maybe throw in some herbs and/or spices for my DH.

Magnificent Cheesy Brown Rice

what a great idea to add cheese...all i did was use chicken broth instead of just plain water and stir in the cheese when it was done - i didn't have any peppers. it was very tasty - i've made it twice in the past week.

Spaghetti with White Clam Sauce

this was surprisingly fantastic. i say this because the inside of a can of clams isn't that appealing. when i told my husband what i was making he said, 'i don't think i like that.' well, he gobbled it right up, along with my 21-month-old. i couldn't believe it. i only used 1/2 a pound of spaghetti, so i cut the oil down to 1/8 cup, 2 TBSP butter, 4 cloves of garlic, 1 15 oz can of chopped clams, and about half the juice, along w/half of the spices. awesome. next time, i'll include some bread to sop up all the juicy goodness.

Orange Glazed Carrots

carrots are like water to me. i know they're good for me, but they just don't taste that great plain. this recipe jazzed them up and made them delicious. i made as is, tho i drizzled a little honey over them (as another reviewer suggested) right after adding the OJ and then added the brown sugar and butter right after that. my goal is to dirty as few dishes, pots, bowls, etc, as possible, so i didn't go to the trouble of thickening it up as others suggested, but i think they tasted great just the same.

Upside Down Chicken Rice

this was really good. the only things I did differently: used boneless skinless chicken breasts, added in about a cup of frozen peas as another reviewer suggested, and cut waaaaay back on the oil. although i was tempted to toast the nuts in the oil, i just toasted them in a dry pan. and when i fried the chicken and carrots before adding the rice, etc., i only put in a tablespoon or two versus 1/4 cup. i also tried to cut down on the number of dirty pans, though technically i dirtied more plates and bowls in the process. for instance, i didn't want to fry the chicken and carrots in a new pot, so i just removed the main solid contents to a plate and poured the stock into a bowl, then poured 3 cups of this into a 4-cup Pyrex liquid measuring cup. (BTW, the recipe is set up to make 12 servings so make sure to pare it down; I went to four.) otherwise, the only other thing i'd do differently in the future is skip the aforeto mentioned frying of the chicken and carrots. i don't think it's worth the effort.

Chocolate Chip Pancakes

i decided to make these chocolate, chocolate chip pancakes. so i used 1 1/4 cups all purpose flour, 1/2 cup whole wheat flour, and 1/4 cup cocoa powder. then i substituted applesauce for the oil (not sure if this was a great idea or not - overall the pancakes were very thick, but not sure if that was the culprit) and used about 3/4 cups of chocolate chips right in the batter. they were tasty with a generous dollop of cool whip on top. mmmm.

Creamy Pasta Primavera

this will be one of those reviews where you'll wonder why i bothered since i really didn't make this recipe, but thought i'd share anyway. i basically had the same ingredients on hand as the reviewer caliloo, so i followed her advice. i sauteed a little shallot, garlic and onion along with par-microwaved carrots, asparagus, broccoli and squash. i only had about half a block of cream cheese, so i cut down on the milk. and i used some leftover rotisserie chicken. i salt and peppered it, threw in some red pepper flakes and dried basil (might leave that one out next time), and used extra parm. it turned out pretty well; i think a little white wine would be good in there and as well as shrimp, if you have it.

Asparagus with Sliced Almonds and Parmesan Cheese

yummy! i usually cook the out of my asparagus, but i followed this recipe exactly, so it was nice and crisp for a change. and i didn't mind my pan getting all gooped up - it was worth it for the wonderful melding of flavors. will make this again.

my husband has made this several times; this was my first foray and it was delish. the only thing i didn't have was cilantro, but it was still good. i also didn't have any chili seasoning packets, so i (mostly) used the chili seasoning mix II from this site. mmmmm-good.

Creme Brulee French Toast

I put this together Saturday afternoon and was in a rush because we were having a party that night. As a result, I didn't get to read others' reviews so I made it as is. Served to our overnight guests with a side of goetta and it was a big hit. Was very tasty, though in the future, I would definitely add pecans and sprinkle a little cinnamon on top. And it did take 10-15 more minutes than stated.

Grilled Apple and Swiss Cheese Sandwich

this was tasty, i've made it twice in the past few days to use up the ingredients. the first time i made it with french bread, thinking it would grill up nice. unfortunately, it's not the best bread to use b/c it really dried out, plus i cut it too thick. today i made it with some multi-grain sandwich bread. it was good, but i kind of burned it. both times, i finished it off in a 350° oven b/c i like my cheese really melty. so even tho i'm not great at making it (through no fault of its own), i think it's a great flavor combo. :)

Roasted Sweet Potato Corn Chowder

this was fairly easy to make, very tasty and relatively healthy. couldn't find corn oil in the store, so just used vegetable oil b/c i couldn't find my olive oil. it was very flavorful and a nice combo for fall. one thing it could have used was a little kick. i put a few splashes of tabasco in my bowl, which was good, but not sure that was exactly what it needed. my husband thought white pepper may have done the trick. definitely a keeper.

Tonkatsu - Asian-Style Pork Chop

These chops were juicy, crunchy and easy to make. I thought they had good flavor on their own - there's plenty of tasty stuff in the egg wash. I let them sit for 10 minutes as the author recommended - maybe that made the difference. And I took other reviewers' advice to make a tonkatsu sauce (kind of funny one wasn't included when you look at the name) for dipping. Found one on another site. Thanks for another staple pork chop recipe.

Margarita Cake

i thought this was a good, moist cake. didn't taste like a margarita imho, then again, i made a few changes to the recipe so i can't really fault it for that. had to use lemon cake, only had enough lime juice fo the glaze, etc. if you want the glaze to be more visible, let the cake cool longer. i did and you could see it fine. it still ran, but that could be because i poked holes and poured glaze in both the top and bottom, without doubling the recipe. the reason for three stars is i don't know if i'd make it again, which could be hormonal as i'm pregnant and the taste of tequila did not sit well with me.

Katrina's Banana Cake

This cake was delicious. Instead of using a tube pan (or bundt pan, for us laypeople), I used two 9" rounds and baked for about 25 minutes. Once they cooled, I iced them with a cream cheese icing I found on another site. Very moist. Would make again instead of banana bread next time I have overripe bananas on hand.

Thirst Quenching Lemonade

My husband was craving lemonade all day. I didn't have any lemons, so I just used the bottled juice and he really liked it. It was a little sweet for me, so I just added water. Thanks for an easy recipe!
