Easy Indian Butter Chicken

oh. my. goodness. SO GOOD! Only thing I did differently was to coat the cubed chicken in a little olive oil and curry (enough spice to cover them pretty well) and baked it. Added chicken to simmering sauce after it was baked through and then let it simmer until it was time to eat... sometimes a hour, sometimes just 15 minutes. Always delicious! And I used half cream and half evaporated milk.

Whipped Cream

I usually just throw in a palmful or so of white sugar rather than messing with the powdered and it works fine. Added some cinnamon to the mix for our pumpkin pie topping.

Roasted Garlic Mashed Potatoes

used 2 heads of roasted garlic, roasted garlic at 400 degrees for 35-45mins. // I prefer smashed potatoes so I blended the roasted garlic with a little bit of the cooked potatoes with a small food processor then added the mix into the rest of the smashed potatoes. // Added 2-3 TB sour cream, as well.

Easy Chicken Satay

This was a great dish! The flavor was delicious - just enough flavor by itself but great with the peanut sauce, too. Loved how easy it was to make such delicious peanut sauce-- I added the juice of 2.5 limes to the sauce. However, I feel like the serving size is off - I used 1.5 lbs of chicken (3 chicken breasts) and it served 3 people with only a tad bit of chicken left over. (I made 1.5x the recipe for the marinade for the 1.5lbs of chicken.) I served the chicken with about 3/4-1 cup of the Asian Coconut Rice posted by SILVREZS. The recipe for the peanut dipping sauce made PLENTY and there is no need to double - after 3 of us had eaten I had about 2 cups of the sauce left. I plan to use it for dressing for a thai salad along with some cilantro-lime dressing.

Honey-Glazed Chicken w/ Peppers and Goat Cheese

I thought this was excellent! I had a moment of dumbness and rubbed the cheese & cilantro mixture under the skin of the back side of the chicken rather than the breast side. Duh. The mixture of the cheese and cilantro was delicious though and the chicken turned out super moist.

Chicken Meatballs w/ Sweet Peanut Sauce

Made these for a life group meeting at my home and they were DELICIOUS! I loved the peanut sauce and the meatballs had wonderful flavor. I only have a tiny grater so I ended up grating about a TB of onion, gave up, and chopped the onion finely instead. Passed along the recipe to a friend at life group. Peanut sauce is definitely a sweet mixture so omit some sugar if you don't want it as sweet - I loved it just as it was, personally. Will be making again very soon!

Cream Puffs

Yum! These were so pretty and easy. I was expecting it to be a difficult dessert before reading through the directions but it was super easy. So yummy, too! (I didn't have a full 2 cups of heavy cream so I mixed 1/3 c melted butter, 1 TB flour and 1 cup 1% milk to make the additional heavy cream.) Other than my heavy cream partial substitute, I didn't change a thing. Didn't even take any reviewers advice just followed the recipe exactly and they turned out perfectly. Made the filling in the morning and the cream puffs about 30 minutes before company was set to come. Perfectly easy, beautiful presentation and tasty dessert.

Easy Drop Biscuits

Delicious biscuits! They taste just like my mamma's biscuits for biscuits w/ white gravy. YUM! I blended them in my Ninja blender and that worked great. Wouldn't do this unless you have a high powered blender w/ more than just a bottom blade though - mine had blades going all the way up the middle. They had the perfect hardness on the outside and were so soft in the middle. YUM!

Cinnamon and Lime Chicken Fajitas

Absolute delicious! I made this tonight for my boyfriend and myself and we are in LOVE! Neither of us could stop going on about how great it was. I made some revisions: -sprinkled the potatoes with some cayenne before baking -Cooked the chicken and potatoes at the same time @ 400 but took the chicken out at 20 mins and the potatoes out at 30. - -Added almost a full bunch of chopped cilantro right before removing the chicken/jalapeno/onion mixture from pan -Used the juice of 2 limes -Used jarred jalapenos, about 2 TB Absolutely delicious!

Oven-Friend Chicken w/ Crunchy Broccoli Slaw

Delicious all around. I added a little extra black pepper upon serving to the broccoli slaw but everything else was done exactly as the recipe states. Loved the flavor of the breaded chicken.

Homestyle Chili

*cut the recipe down for a smaller family and changed the servings to 5* the spices make this chili taste the way it does and I followed them exactly. DELICIOUS. perfect straight forward chili recipe. What I love most is that you just throw it all in the pot, stir and cook. Only need to brown the meat separately and you can do that while you're prepping everything else. I added some frozen corn to mine, omitted the bell pepper b/c I didn't have any on hand, added a full medium sized onion, used 2 14-oz cans tomato sauce & 1 lg can crushed tomatoes instead of the tomato juice. Threw maybe a cup of water to add some liquid. Used a large can of red kidney beans. I changed things but nothing about the spices and that's what I think makes it what it is.

President Ford's Braised Eye Round Steak

This was absolutely delicious!!! I cooked it in my french oven since I only made 3 steaks for myself and my husband. I didn't have beef consomme or wine so I used about 1/2 cup balsamic vinegar and 1/4 cup Worcestershire sauce with about 3/4 cup of water. I let it cook for about an hour and then chopped up up some potatoes and dumped in baby carrots and added enough water to cover everything... I added about 1/4 cup balsamic vinegar and 2 TB of Worcestershire sauce more, also. My husband raved about it!
