Double Tomato Bruschetta
This was...how can I say this...DELICIOUS! I've never had bruschetta before and after this recipe, I can't imagine life without it! I did not have sun dried tomatoes, but I did have fresh from the garden ones and it was exceptional! Next time, I will purchase some sun dried, just to see if I'm missing anything. The balsamic vinegar changes your life. I don't care if you can't stand vinegar DON'T SKIP OUT ON THIS RECIPE! The garlic adds a nice bit to it. I used shredded cheese this time, but I do see how the sliced cheese could make prep easier, and you can get some nice cheesy blanket action going on. Thanks Laurie! This was a life changing recipe for me!

Smothered Potatoes
I was soo excited to find this recipe! My mom made this ALL the time when I was little and I remember loving the cooked flour part! It's lovin' in the tummy! I changed the recipe just a bit. I sauteed the onions in a tablespoon of olive oil and added a tsp of sugar and 1 tbsp of balsamic vinegar. I proceeded with the recipe as is, except after the potatoes were done and cooling, I added 2 more tbsps of balsamic vinegar. The vinegar really added a complexity of flavors that made this recipe POP! I don't remember my mom's potatoes being ready so quickly, but I give the recipe 5 stars alone for the quick prep and cook time! Thanks MSUNA!

Baked French Fries I
These fries taste phenomenal! A great alternative to frying them. I didn't miss the oil at all! However, when I cut my potatoes I was not consistent with the size and thickness of each cut so my thinner fries were burnt. Next time I will keep them wedge size. I also tossed in a sweet potato. Will definitely make these again!
