Baked Buffalo Wings

Reviewed: Feb. 7, 2011
A big hit with the family. I did cut my wings into 3 sections (discarding the tip) first, and used a metal rack on the baking sheet. Result was wonderfully browned and non-soggy. I was concerned about it being too spicy (for the kids) but it wasn't (can always add pepper sauce to taste at the table).

Thai Cucumber Soup

Reviewed: Jul. 23, 2009
Fantastic! I wouldn't have dreamed of a hot cucumber soup, but with the fish sauce taste it works for me. I used 4 cucumbers and seeded them, and two serrano peppers rather than 3 (seeded). I skipped the lemongrass as none was on hand. I used a little extra chicken stock and no water, and used an immersion blender right before adding the sour cream to give it a nice texture - but stopped when there was still some cucumber chunks. Will definitely make this again!

Bacon-Mustard Salad Dressing

Reviewed: May 20, 2008
Wonderful! I did save the best part of the scallion greens and chop them finely and add after blending the dressing - gave it some nice color, and added a pinch of cayenne to complement the sweetness of this dressing.

After-Thanksgiving Turkey Soup

Reviewed: Nov. 23, 2007
Fantastic! Highly indulgent. I skipped the chicken boullion, and had cream on hand so I used it in place of half-and-half. I also pulled the meat off the turkey and continued cooking the carcass over several hours. This is an unbelievable cream of turkey soup.

Washabinaros Chili

Reviewed: Aug. 11, 2007
Outstanding. Chili is my personal experimentation dish when I am in need of therapeutic cooking time, so I've tried a lot of variations. This is spot on. Wife found it a bit spicey (and she's not averse to seasoning - this is unabashedly - though not unbearably - hot). I tend to like to drain my meat after browning to avoid the need to skim, but it wasn't overly greasy even without draining.

Slow Cooker Adobo Chicken

Reviewed: Jun. 7, 2005
Excellent, moist, great flavor. The sauce is great with bread. I triple the onions because they come out so good.

Habanero Hellfire Chili

Reviewed: May 22, 2005
Great flavor! First time through I cut the peppers in half per some reviews. It was tangy, with a unique tang to it, but I could definitely have gone for more heat. I must admit I added a julienned carrot and a stalk of minced celery. I'd advise not being to fearful of the heat - it's a great recipe.

Best Italian Sausage Soup

Reviewed: Jan. 28, 2003
Not a favorite, and perhaps just a matter of taste. The recipe is a bit non-specific (are the sausages whole or sliced or taken out of casings, how are the onions to be cut, how about the whole peeled tomatoes?) The pasta sucked up all the liquid and it turned into a very thick stew without a whole lot of flavor (I see the suggestions others had about using spicey sausage, which might improve on that).

Baked Orange Roughy Italian-Style

Reviewed: Sep. 5, 2001
This was quick enough for a weeknight dinner, but really fantastic. The butter adds a lot of flavor to the fish. I threw the cheese in the food processor to get it very finely grated.
