Uptown Cowboy Caviar

I made this recipe as written. I don't find it helpful to give a recipe a 5-star rating when you change too many of the ingredients. The only thing I did not like about this was the homemade dressing. It was just too sweet for my taste. I prefer the versions that have a little more tangy flavor. With some tweaking on the dressing it would be better. The vegetable and bean combination was nice and it was a very pretty dish. I was surprised that I would like the pinto beans. Never saw Cowboy Caviar with anything other than black beans and black eyed peas. I did think it was a bit too much corn. Would probably use a cup of frozen corn next time.

Beef Tips and Noodles

Made it as is. The taste was good but I only gave 3 stars for a couple of technical reasons. First off, the noodles are way too much for the amount of meat & sauce. I only cooked about 70% of the 16 oz package and had way too many noodles. Second, the sauce almost entirely evaporated and cooked down to nothing. Not sure what the solution is here. Maybe a smaller pan that can be covered? (13x9 seemed too big. Sauce was shallow going in.) Maybe doubling the sauce or the water? Maybe cooking at a lower temperature? I'll try it again, but it will need some modification to work. What I made barely fed my family of four, unless they wanted a ton of noodles.

My Chili

Made as is this recipe is pretty bland, more like beefy tomato sauce than chili. If you look at the other reviews most people had to kick it up in terms of spice. That's what's off about the rating system. If you're not rating the recipe as it's written, the rating doesn't help much. I think this could be a 5-star chili but it definitely needs some tweaking. On the plus side, very easy to prepare and doesn't take long to make.

Beef Tips

Great recipe, but will alter a bit for future use. First off, too much oil. There was a lot of oil sitting on top that I had to skim off before serving. I omitted the salt and still felt that it was too salty for my taste. Will make again with low sodium soy sauce and see if there are low sodium alternatives for the worcestershire and brown gravy mix. I found it to be done in about an hour before I added the gravy mix. It was also thick enough without needing cornstarch as some had suggested. Overall, quick & easy to prepare and am willing to make again with the changes.

Roasted Vegetables

I loved this recipe! I think they people who say you must use fresh herbs or you'll ruin it are wrong. I used dried herbs, only because I didn't have fresh herbs on hand. You just have to remember to scale back. One tbsp fresh herbs is usually equal to about one tsp dried, but I used just under one tsp thyme and about a half tsp rosemary. I thought it came out perfectly. Will definitely make this again. Super easy and super delicious.

New Orleans Corn Bisque with Smoked Sausage

Made it as written. This was just OK, but my family didn't really care for it. It is very similar to another recipe here, Delicious Ham & Potato Soup, which is much better and just as easy to make.

Broccoli Chicken Divan

Made it exactly as written. Disappointing. Not as good as I had hoped it would be. It wasn't horrible, it was just OK. Certainly nothing like the rave reviews posted. If I were to make it again I would probably have to do as others did in their reviews and add some extra seasonings to liven it up a bit. I do think it's worth trying again with some adjustments.

Sausage Balls

Good recipe. You can freeze any leftovers and re-heat as needed which is a big help. I used one 2-cup bag of shredded cheese and found it to be more than adequate. I also made the mistake of making them too big which will take longer to cook. Made the second batch much smaller and they turned out better. Pork sausage is not something you want to under cook.

Chicken Fettuccini Alfredo

I made this recipe exactly as written. It's good but not what I was expecting, especially with such a high rating. First off, this makes a HUGE amount of food, so unless you have a large family or you like eating leftovers for days, you'll want to cut it back. The sauce is very heavy, not surprisingly. The taste is good but overall I prefer a lighter traditional alfredo sauce that's not so thick and overwhelming.

Turkey Goulash

Pretty good recipe. Family enjoyed it. I made it as written. Will probably tweak it a bit next time I make it. I would cut back the pasta by about a third and cut the sugar in half. I may sub oregano instead of the basil or perhaps add it with.

Best Tuna Casserole

Quite good. Very easy to pull together. My only change to the recipe was that I added frozen peas with carrots, not just peas. I will say that this recipe makes a lot of food, much more than what I would call 6 servings. I think if you cut it in half it would easily feed a family of four. As is, I have an enormous chunk left over. I would probably use less egg noodle as well, just for my own taste.

Hearty Chicken Tortilla Soup

Made it exactly as written. Very good flavor. My only change would be to use much less rice as it soaked up too much of the broth, rendering it not very "soupy." I added a little more chicken stock & salsa to balance it out but it was still too much. Good recipe, though. Very quick and easy to pull together and even my picky kids enjoyed it.

Best Baked Chicken

This one is a keeper! I cut the recipe in half and it easily fed my family of four. Other than that, I made it as written with no changes or substitutions. Super easy to throw together. It was very good tasting, and a big hit with even my picky eater kids! To those that are slamming the recipe on sodium content alone, there are ways to cut back. You can use low-sodium soy sauce and unsalted butter and cut the garlic & celery salts back (obviously). It isn't helpful to slam a recipe on salt content alone without knowing if you tried to make the recipe.

Chicken Spaghetti II

Made this as written. Good recipe that was easy to throw together, but will make a few changes next time. I found the Velveeta cheese to be too gooey and the taste of it overwhelmed the dish. Will definitely make this again, but will do half of the Velveeta and add more if necessary. I will also probably add either a larger can or two cans of the tomatoes. The 10-oz can got lost in all the goo.

Terrific Turkey Chili

I made this pretty much almost as written. I did not have coriander & left out green chiles by choice. This was a great and super easy recipe but too spicy for my young children. I also simmered it a good 30-45 minutes after all the ingredients were added. Maybe this was omitted? Cooking time is noted as 55 minutes but does not say this in the actual recipe other than 5 min here, 10 min there, etc. I will make it again and adjust the spices accordingly.

Beaker's Vegetable Barley Soup

I've made several 5-star rated recipes lately and they have all disappointed me. This one as well. Was not as flavorfully balanced as I had hoped. I made it exactly as written. All I could taste was pepper. The base seems very bland. My family ate it but didn't particularly love it. Probably won't make it again.

Slow Cooker Chicken Taco Soup

Very disappointing. Followed this to the letter. The soup never looked like it was cooked thouroughly and was far too spicy - should have known with all the green chilies. Better recipes similar to this out there.

Mashed Potato Hot Dish

This was easy but just OK in terms of taste. It was strange at first and then you got used to it the more you ate it! I think it was the frozen green beans? Might be better with a cream of mushroom or celery soup. Cream of chicken & hamburger is just odd to me. Not sure that I would make it again.

Best White Icing Ever

This might be fine for decorating a cake, but I don't think it's meant to be used on the whole cake, which is what I did. I prepared it exactly, making sure to thin it per the instructions. It tastes like very sweet Crisco. Won't use this again.
