Uptown Cowboy Caviar
I made this recipe as written. I don't find it helpful to give a recipe a 5-star rating when you change too many of the ingredients. The only thing I did not like about this was the homemade dressing. It was just too sweet for my taste. I prefer the versions that have a little more tangy flavor. With some tweaking on the dressing it would be better. The vegetable and bean combination was nice and it was a very pretty dish. I was surprised that I would like the pinto beans. Never saw Cowboy Caviar with anything other than black beans and black eyed peas. I did think it was a bit too much corn. Would probably use a cup of frozen corn next time.

Beef Tips and Noodles
Made it as is. The taste was good but I only gave 3 stars for a couple of technical reasons. First off, the noodles are way too much for the amount of meat & sauce. I only cooked about 70% of the 16 oz package and had way too many noodles. Second, the sauce almost entirely evaporated and cooked down to nothing. Not sure what the solution is here. Maybe a smaller pan that can be covered? (13x9 seemed too big. Sauce was shallow going in.) Maybe doubling the sauce or the water? Maybe cooking at a lower temperature? I'll try it again, but it will need some modification to work. What I made barely fed my family of four, unless they wanted a ton of noodles.

My Chili
Made as is this recipe is pretty bland, more like beefy tomato sauce than chili. If you look at the other reviews most people had to kick it up in terms of spice. That's what's off about the rating system. If you're not rating the recipe as it's written, the rating doesn't help much. I think this could be a 5-star chili but it definitely needs some tweaking. On the plus side, very easy to prepare and doesn't take long to make.
