Coconut Cream Pound Cake

This cake was so wonderful! I made it as my birthday cake and served it with whipped cream and sliced strawberries. Good thing it's a big cake, because every single person, both children and adults, came back for seconds. I used unsweetened organic coconut flakes, which I think was key for keeping it from being overly sweet, and the large flakes gave it a great coconut chewiness. If the leftovers last long enough to begin to dry out, you can take care of that by topping it with your favorite ice cream!

BBQ Pork for Sandwiches

I combined some other reviews. I used pork shoulder for a cheaper cut and cooked it for 11 hours on low with a bottle of beer instead of broth. Then shredded and mixed with BBQ sauce. Next day, put it back in the slow cooker til noon. Everyone gobbled it down on toasted buns with chips and fruit. Not my favorite slow cooked pork but definitely the easiest and plenty good.

Zesty Slow Cooker Chicken Barbecue

This gets 5 stars for being good and so super easy. I didn't change a thing for the maximum easiness - used 4 fresh chicken breasts, most of a bottle of good bbq sauce and cooked on high for about 4 1/2 hours. The chicken was perfect and the kids liked it. We'll make this often!

Delectable Marinated Chicken

This was a terrific marinade! I made BBQ wings marinated in this for about 4 hours and they were terrific. Will definitely use this again for chicken.

Colleen's Slow Cooker Jambalaya

I loved the idea of making this in the slow cooker, but we didn't love the result. Even though this recipe has the same ingredients as the jambalaya I usually make, somehow it didn't have the same flavor. I'll go back to my other recipe.

Moussaka

I was very worried to make this dish because I have never liked eggplant, but I received one in my CSA share and decided to give it a try. What a nice surprise! I didn't just swallow it down, I actually liked it! It has a really nice flavor, and the eggplant blends in. The kids weren't crazy about the bechamel sauce, but didn't complain about the eggplant. I will make this again for company I think. This time I cut the recipe in half and it fit nicely in a small oblong dish. I made the recipe as directed except without adding any butter to the ground beef mixture. I also forgot to scald the milk first for the bechamel. It took forever to thicken (more than 20 minutes?) and I had to add an extra TBL of flour, but it eventually did thicken. I served this with a simple side salad of tomato and cucumber slices drizzled with balsamic vinegar and olive oil and topped with feta cheese.

Beginner Chicken and Dumplings

This was pretty easy and I liked the flavor. I thought it was maybe a touch too soupy, because I had to dig to find the chicken and veggies (I added celery, carrots and peas with the dumplings). But can't complain. I also had to add an extra quarter cup or so of Bisquick to make a thick enough dough to drop in. I will make this again.

Cranberry Almond Crunch Slaw

This was a very easy slaw recipe, and it was mild and tasty. I didn't have the specified nuts but added a healthy amount of Craisins and sliced almonds. Easy to have for a barbecue or share at a potluck.

Yummy Veal Meat Loaf

This meatloaf was amazing! I hardly ever make meatloaf, but I will make this more often because my whole family (hubby, kids 5 and 7) really liked it. I made it as directed, except for substituting chili sauce for the ketchup that was baked in, because I happened to have chili sauce to use up. I served it with roasted garlic and cauliflower and wild rice. Yum!

Pumpkin Bread IV

This makes a good pumpkin bread. I did do a few things suggested by others to make it healthier - cut sugar to 1 cup white and 1 cup packed brown sugar, and used 1 cup applesauce and 1/2 cup oil. I upped spices to 2 teaspoons each. I made muffins for my daughter's kindergarten class, and the recipe made 24 large muffins plus enough leftover for a very small loaf. Recommended!

Applesauce Cake I

Made this to take to my daughter's kindergarten class for snack. It tasted good but I was expecting more of an apple taste - it actually tasted almost like gingerbread. I would probably reduce the cloves next time. I doubled the recipe and cooked it in a 9 x 13 pan and it takes longer to cook that way, so it was a bit hard to get the middle cooked through. Overall the kids seemed to like it and I would probably make it again as a filling snack.

Baked Ziti

This was easy and tasty. I also like it because it's easy to modify. I used only 1 pound of ground beef, but the same amount of cheeses. I also used part spaghetti sauce and part pizza sauce, because that's what I needed to use up, and it turned out just fine.

Grilled Green Apple and Gruyere Sandwich

Cheesy Ranch Potato Bake

This was a tasty potato dish and a nice change from regular au gratin potatoes. I halved the recipe and used 1/2 packet of ranch seasoning mixed with 1/2 cup buttermilk. Yum!

Christmas Breakfast Sausage Casserole

Very basic, very classic. Made as directed and we enjoyed it. My kids aren't big egg eaters so we liked that the eggs were only really to hold it together and it was more bread and sausage than egg.

Strawberry Shortcake

This was beautiful to present and tasted amazing. I like to try the recipe as directed before making any changes, and in this case that was a good choice. I made the recipe exactly as written and it turned out perfect! I had a gorgeous biscuity shortcake that was excellent with the whipped cream and strawberries. 2 notes: 1) Some reviewers added more shortening when their mixture didn't really resemble course crumbs. It's true, there isn't really enough shortening for the whole thing to be very crumby - it almost just mixes in, and there are just really fine crumbs. But that's okay, it turns out great. 2) After cutting the cake in half, I spread whipped cream between the halves and put 2 layers of sliced strawberries on top, and then added the top half. I piled some strawberries on the top and put a huge dollop of whipped cream on top of that. Then I spread the rest of the strawberries all around the edges of the plate around the cake, so they encircled the cake. It was really showy, but this is actually a fairly easy dessert to make.
