Yummy Veal Meat Loaf

This meatloaf was amazing! I hardly ever make meatloaf, but I will make this more often because my whole family (hubby, kids 5 and 7) really liked it. I made it as directed, except for substituting chili sauce for the ketchup that was baked in, because I happened to have chili sauce to use up. I served it with roasted garlic and cauliflower and wild rice. Yum!

Pumpkin Bread IV

This makes a good pumpkin bread. I did do a few things suggested by others to make it healthier - cut sugar to 1 cup white and 1 cup packed brown sugar, and used 1 cup applesauce and 1/2 cup oil. I upped spices to 2 teaspoons each. I made muffins for my daughter's kindergarten class, and the recipe made 24 large muffins plus enough leftover for a very small loaf. Recommended!

Applesauce Cake I

Made this to take to my daughter's kindergarten class for snack. It tasted good but I was expecting more of an apple taste - it actually tasted almost like gingerbread. I would probably reduce the cloves next time. I doubled the recipe and cooked it in a 9 x 13 pan and it takes longer to cook that way, so it was a bit hard to get the middle cooked through. Overall the kids seemed to like it and I would probably make it again as a filling snack.
