Greek Pasta Salad I

Ruth's Red Lentil and Potato Soup

I tried it. Excellent. Strange, I lived in Louisiana many years ago, and I heard about "File Gumbo". Wasn't quite sure what it was. I was in the store last week, and I saw "File powder" on the shelf. I figured I would try the recipe. Strange to cook without salt or meat. I did not have any kale, so I substituted collards. Came out OK. Will definetly make this soup again.

Slow Cooker Beef Pot Roast

Excellent! I prefer to cut the beef into chunks about 3in cube. This way you can get the seasonings and flour on all sides. You can add a half-cup of burgundy wine for "bourginon" flavor.

Cabbage Rolls II

One tip: After the cabbage leaves are steamed, it makes it easier to roll them up, if you trim out the tough stem portion of the leaf.

The Real Mojito

I like to use 151 proof Bacardi, and gold rum. I use a few drops of mint extract and a short squirt of agave nectar. Splendid!!

Corned Beef and Cabbage I

This dish is excellent in a pressure cooker. Place meat and seasonings in pot, cover with water. For a standard brisket, bring to pressure for 45 mins. Then place cabbage, vegetables, potatoes on top of meat. Pressure up, for 15 mins. release pressure and enjoy.

Coconut Macaroons

FIVE stars. I love this recipe. Easy to make, and delicious. I get the candied cherries, that are used for christmas fruitcakes, and press one into the sfot macaroon right after they are baked. Awesome.

Big Soft Ginger Cookies

Absolutely awesome. I added a little extra flour, to make the dough stiffer, and easier to handle. I made a batch, and I made the balls slightly bigger than a walnut. The result was excellent, the cookies were soft and delightful. I used butter-flavor shortening, instead of margarine. I plan to double the recipe, next time, to make even more. Delicious!!!

Delicious Ham and Potato Soup

Absolutely excellent soup. I used Yukon Gold potatoes. I had an old-ham-hock in the freezer, I peeled off the excess skin, and scraped the meat off the bone. I put a tablespoon of oil in the pot, and fried the ham bits. I placed the bone in the soup,later. The soup is the most delicious I have ever tasted, it will be my favorite from now on. I will try it next time with canned clams, it should work out fine.

Buttery Soft Pretzels

Excellent. Tried a batch (halved the recipe). Did not let it rise long enough. Tried again, much better. Wife prefers them WITHOUT salt on top. I suggest adding some extra gluten to the flour, for chewiness.

Ham N Cheese Quiches

I think these are excellent! I make a couple of changes. I make a mix of half spinach half ricotta cheese, and fill the cups. I also make a mix of beaten egg, chopped green onion, and bacon for mini-quiche lorraine.
