Chef John's Perfect Mashed Potatoes

Everyone seems to be able to make mashed potatoes... but not me. I know I never added this much butter & milk. Maybe I over or under cooked the potatoes before? I'm not sure how else I could goof up something so simple. I followed this & they turned out great. Thanks for the help Chef John.

No Bake Cookies III

I let it set in the pot a couple minutes before scooping onto wax paper. I didn't want it to spread. They took a while to firm up, but they tastes GREAT. I keep them in the fridge/ freezer. You can eat them straight from the freezer (they don't turn into rocks),

Chicken 'n' Biscuits

Instead of making the scratch biscuits, I put Pillsbury Biscuits on top for the last 20 minutes. The biscuits didn't bake well on top of the mixture, do next time I'll bake the biscuits seperate or try the scratch. Skipped the bacon & onions.

Strawberries

I like the flavor, but found shaping them too time consuming & not worth the effort. Next time, I'll just roll them in balls, skip the frosting & serve in cupcake papers. Chewy & tasty.

Per reviews, I doubled the cardamom, added 1 tsp vanilla & 1 Tbsp brown sugar. Taste like cardamom shortbread.

Chocolate Chip Sprinkle Cookies

I altered it, but we like it. The krispies make it crunchy while the oatmeal provides a chewy texture. I omit the nuts, use 1/2 crisco/ 1/2 margarine, doubled the vanilla, use m&m's instead of choc chips, up the krispies, up the sprinkles.

Decorator Frosting

I use this all the time. I make it with 1/3 c crisco & 1/3 c margarine instead of 2/3 c butter. It tastes great & dries hard enough for stacking (at least it does the way I make it).

Irresistible Jif® Peanut Butter Cookies

I've been using this recipe for years. Soft & chewy. Just bake longer for a crisp cookie. It always turns out well. Variations: -1- add m&m's -2- top with a chocolate kiss

Black Russian Cake I

I used water instead of vodka. Still wonderful. I put the cake back in the pan after poking it with holes. Slowly pour the glaze over cake. Let cake set in pan for an hour to absorb glaze. Rich & moist.

Golden Rum Cake

I pricked the top & sides of the cake with a toothpick before reinserting it into the pan. I pricked the bottom with a skewer. The glaze was absorbed within an hour. Very moist & easy. This went over well at a family luau party. Sent the recipe home with a guest. The rum flavor is strong.

All-Day Apple Butter

Good and easy. I put 13 large peeled & cored apples though the food processor to shred them. I only used 2 c sugar. Freezes well.

Restaurant Style Chicken Nachos

I baked a crust of reduced-fat crescent rolls (per package directions) then topped with this, ommitting the tortilla chips. Yum. Also good as written.
